How To make Blueberry Funny Cake
2 c Blueberries; rinsed and dra
-ned, fresh 3/4 c Sugar
2 ts Lemon juice
1/4 c Butter, room temperature
1 Egg
1 1/4 c Flour; sifted
1 ts Baking powder
1/2 ts Salt
1/2 c Milk
1 ts Vanilla
1 9" pie crust; unbaked
Combine blueberries, 1/2 cup of the sugar and all the lemon juice in a saucepan. Stirring gently, heat mixture until it is simmering and sugar is dissolved. Let cool to lukewarm while preparing cake batter. Cream butter, add 1/4 cup sugar and cream thoroughly. Add egg and mix well. Sift flour with baking powder and salt. Alternately, add with milk to egg mixture. Add vanilla. Gently, fold blueberry sauce into batter. Pour batter into unbaked pie shell. Bake in a preheated 375 degree oven for 30 to 35 minutesor until cakes tests done.

BETH’S QUICK BLUEBERRY ALMOND TEA CAKE RECIPE
Serves 8
INGREDIENTS
¾ cup (180 ml) of melted unsalted butter
¼ cup (60 ml) canola oil
1 cup (200 g) sugar
2 eggs
1 ½ (7.5 ml) tsp pure almond extract
¼ cup (60 ml) water
1 ½ cups (180 g) flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
6 oz (170 g) fresh blueberries
¼ cup (50 g) raw sliced almonds
1-2 tbsp (13 g) of powdered sugar for garnish
METHOD:
Preheat oven to 350F/(176C) degrees.
Spray a 10” (25 cm) deep dish, removable bottom, fluted tart pan with baking spray. Set aside. (you can also use a regular cake pan, or turn this into muffins too)
In a large bowl combine melted butter, canola oil, and sugar. Mix well until combine. Then with a wire whisk whip in eggs, whisking until combined. Add almond extract and water and stir well.
In a small bowl combine flour, baking powder and salt whisk until combined. Add flour mixture to wet mixture, stir gently with a wooden spoon or spatula. Add blueberries, stirring in gently.
Pour batter into prepared pan and top with a sprinkle of raw almonds. Bake for 25-30 mins until golden brown and a toothpick comes out clean.
Remove cake from the tin. Place on a cake stand and dust with powdered sugar.

LEMON BLUEBERRY CAKE RECIPE
One of my favorite cakes of all times. This cake is very moist, light and fluffy that bursts with the flavor of lemon and blueberries.This will be your go to recipe for a lemon blueberry cake...
Ingredients:
1/2 cup room temperature butter
1 1/2 cup sugar
4 eggs
1 tsp vanilla extract
zest of 1 lemon
juice of half a lemon (about 2 tbsp)
1 cup plain yogurt
2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 1/2 cups fresh or frozen blueberries (I used fresh ones)
- 24 cm/9 inch cake pan buttered and floured.
- Bake at 350 F/180 C for about 50-55 minutes or until a skewer inserted in the center comes out clean( always make sure you don't over bake your cakes so they stay soft and fluffy and doesn't dry out).

This easy dutch oven recipe for Lemon Blueberry cake would be great to try on your next camping trip. Not only is it easy but it is a different and unique camping dessert. This recipe is a great one to try if your just getting started with a dutch oven as a part of your camping cooking.
Cooking times will vary with outside temperature and altitude so you may need to have a second batch of charcoal ready to go.
