2 lb Beef rib bones
2 1/2 qt Water
1 c Dried cranberry or kidney be
2 lb Smoked meaty ham hocks, cut
3 Large carrots, sliced crossw
1 Large onion, chopped
1/2 c Chopped fresh parsley
1 Clove garlic, minced or mash
1 ts Dry mustard
4 oz Uncooked lasagne, broken
1 oz Bleu cheese, crumbled
1/2 lb Cabbage, finely shredded
Salt to taste Place beef bones in kettle, cover with water, bring to a>>> boil, reduce heat, cover, and simmer for 4 hours. Chill bones and broth and remove fat from surface. Add beans and ham hocks, heat to boiling, reduce heat, cover, and simmer for 2 hrs. more. Chill and remove fat from surface; remove meat from bones; return meat to soup. Add carrots, onions, parsley, garlic, mustard, lasagne, and bleu cheese. Cover and simmer 2 hours more. Add cabbage; cook 5 mins. or until tender. Taste; add sat if necessary. Makes 8 servings. Minestrone Soup
Warm your bones with a healthy sized bowl of minestrone soup that's jam-packed with loads of different veggies, pasta, and beans.

Ingredients
1/3 cup olive oil
1/4 cup butter
1 yellow onion diced
2 carrots diced
2 ribs celery diced
1/2 lb green beans frozen or fresh, cut into 1 inch pieces
1/2 head cabbage 1/2 small head of cabbage, shredded, about 2 cups
2 medium zucchini or squash, diced
16 oz diced tomatoes canned with the liquid
5 oz spinach fresh or frozen. drained if necessary and roughly chopped
6 cups vegetable stock or chicken stock, plus water if needed
2 tsp salt
1 tsp pepper
16 oz great northern beans or other white bean, drained and rinsed
16 oz dark red kidney beans drained and rinsed
8 oz ditalini pasta
parmesan cheese, basil, or parsley optional as garnish
Instructions
In a large dutch oven (7.5 or 8 qt), heat oil and butter until melted. Add the onions, carrots, celery, and green beans. Cook for 10 minutes stirring occasionally.
Add in the cabbage, zucchini or squash, and diced tomatoes. Cook for another 10 minutes stirring occasionally.
Add the spinach, stock, salt, and pepper. Stir and simmer for about 30 minutes.
While the soup is simmering, cook the pasta in a separate pot and drain.
Add the drained and rinsed canned beans to the soup, along with the drained pasta. Stir and heat through about 5-10 minutes.
Serve and top with fresh herbs or cheese.

French Onion Soup with Blue Cheese Croutes
Serves 4 Prep 10 mins Cooking 25 mins
1 tbs olive oil
20g butter
4 large (about 200g each) brown onions, halved, thinly sliced
5 thyme sprigs
2 tbs plain flour
1/3 cup (80ml) dry white wine (optional)
4 cups (1L) salt-reduced beef stock
1 tsp Coles Dijon Mustard
150g soft blue cheese
8 slices Coles Bakery Stone Baked Light Rye Sourdough Vienna*, toasted
1. Heat the oil and butter in a large saucepan over medium heat. Add the onion and thyme and cook, stirring occasionally, for 3 mins or until the onion softens slightly. Cover and cook, stirring occasionally, for 10 mins or until the onion is soft and light golden.
2. Add the flour and cook, stirring, for 1 min or until the mixture is grainy. Add wine, if using, and cook, stirring, for 1 min or until well combined. Add the stock, mustard and 1 cup (250ml) water. Bring to a simmer and cook for 10 mins or until onion is very soft and the soup thickens slightly. Remove and discard the thyme. Season.
3. Spread blue cheese over the toasts. Ladle soup among serving bowls and top with toasts. Season to serve.
Serve with: chopped chives and thyme sprigs
