Servings: 8
Preparation Time: 30 minutes (need cooked rice)
Chilling Time: 2 hours or longer
4 cups cooked brown rice
1 - 15 oz can black beans, rinsed and drained
1 - 15 oz can garbanzo beans
½ cup chopped scallion
2 stalks salary, sliced
½ cup chopped green bell pepper
½ cup chopped red bell pepper
1 – 4 oz can chopped green chilies
1 cup frozen corn kernels, thawed
1 cup frozen peas, thawed
¼ cup chopped fresh parsley or cilantro
1 cup of your favorite oil free dressing or salsa
Combine all the ingredients in a large bowl and mix well. Cover and refrigerate for at least two hours to allow the flavors to blend.

INGREDIENTS
1 cup canned black beans
1 cup cooked brown rice
1 1/2 cup canned peaches, drained, rinsed, and diced
1/2 cup red onion, finely chopped
1 lime
1/2 cup cilantro, chopped
Salt and black pepper, to taste
PREPARATION
- Combine brown rice, black beans, peaches, and red onion in a bowl
- Add zest and juice of one lime
- Chop cilantro leaves and add to the bowl
- Mix well and season with salt and black pepper to taste
- Serve and enjoy!
