INGREDIENTS FOR ALMOND COOKIES:
►16 Tbsp (1/2 lb) unsalted butter, softened
►½ cup (62 grams) powdered sugar, plus more for rolling cookies
►1 tsp vanilla extract
►2 cups (250 grams) all-purpose flour *measured correctly
►½ tsp salt (we used fine sea salt)
►1 cup (100 grams) almond finely ground meal or almond flour
►½ Tbsp orange zest from 1 medium orange

These amaretti cookies are crispy on the outside and soft and chewy on the inside. Made with unblanched almond flour, these simple cookies are a perfect treat any time of the year.
Prep Time: 10 min | Cook Time: 25 min | Total Time: 35 min | Servings: 16 cookies
INGREDIENTS:
• 2 cups unblanched almond flour (
• 1 cup granulated sugar
• 1/4 tsp salt (
• 2 large egg whites
• 1 tsp lemon juice
• 1/2 tsp almond extract
• 1/4 cup powdered sugar
INSTRUCTIONS:
1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together almond flour, sugar, and a pinch of salt. Set it aside.
3. In another large bowl, beat the egg whites until they're foamy. Add lemon juice and almond extract, and keep beating until the mixture forms medium-stiff peaks.
4. Gently stir in the dry ingredients until everything is well mixed.
5. Take scoops of the dough and shape them into small 1-inch balls.
6. Roll these dough balls in powdered sugar until they're well coated, then place them on your prepared baking sheet.
7. Bake in the preheated oven for about 25-30 min or until they have cracked tops and slightly browned bottoms.
8. After baking, let the cookies cool for 5 min on the baking sheet and then transfer them to a wire rack to cool completely. Enjoy!

An old world favorite cookie from Siena, Italy with a delicate flavor of almonds. Hard on the outside with a soft center. Delicious!!
Ingredients:
2 egg whites (room temperature)
2-3 drops lemon juice
1 teaspoon vanilla extract
1 tablespoon almond extract
2 ¼ cups almond flour
1¾ cups powdered sugar
1/4 teaspoon baking powder
1 teaspoon orange zest
Extra powdered sugar for rolling cookies
Directions:
Preheat the oven to 300F. Line a large cookie sheet with parchment paper.
In a medium bowl, add the egg whites with 2-3 drops of lemon juice. Whip until stiff peaks. Add the vanilla and almond extracts and whip again, to stiff peaks.
In a separate bowl, sift together the almond flour, powdered sugar and orange zest. Fold into the egg whites.
Shape the cookies into generous teaspoon size balls and roll completely in the powdered sugar. Place on the baking sheet about 2 inches apart. Press down on each cookie to slightly crack the surface. Bake for 18-20 minutes. Cool completely. The outside of the cookie will harden but the center will remain soft. Enjoy!!!

Mix the almond flour with the sugar, make sure there are no lumps. Add the egg whites slowly and mix everything well. Then add the lemon zest and the almond flavor . Mix well, the dough should not stick to your hands.

4 tazze di farina di mandorle, 1, tazza e mezzo di zucchero ( 300 g), 4 albumi d’uovo sbattuti appena un po', scorza di limone (1 limone) 1 cucchiaio di aroma di mandorla (facoltativo). Per le decorazioni vi servirà 1 tazza di zucchero, mandorle tostate e ciliegie candite.
Impastare la farina di mandorle con lo zucchero, facendo attenzione che non ci siano grumi. Unite gli albumi poco alla volta e amalgamate bene il tutto. Quindi aggiungere la scorza di limone e il sapore di mandorla. Mescolare bene, l'impasto non deve attaccarsi alle mani.
