When blueberries are in season and you've had your fill of eating them out of hand, try making this delicious homemade Blueberry Sauce. It's full of blueberries in a thick bluish purple sauce, and its tangy sweet flavor makes it an excellent accompaniment to pancakes, waffles, crepes, ice cream, stirred into plain yogurt, spread on your morning toast, or even as a filling or topping for cakes.

Keto Strawberry Sauce | How To Make Topping For Cheesecake, Pancakes and more
This Keto Strawberry topping is great for cheesecake topping, pancakes, french toast or anything you want to add a strawberry topping to. It even goes well in yogurt.
Ingredients:
4 Cups Strawberries
½ Cup Water
2 tsp Lemon Juice
¾ Cup Sweetener (I used Erythritol)
1 tsp Vanilla Extract
½ tsp Xanthan Gum
Small splash of liquid stevia (if using Erythritol)
Instructions:
Add strawberries and sweetener to a small saucepan on medium heat. Allow to cook about 10 minutes to allow strawberries to create juice. Add in remaining ingredients except the xanthan gum. Stir until combined. To thicken the sauce, sprinkle in xanthan gum very slowly, adding in only a tiny bit at a time. Cook about 5 more minutes to allow the sauce to thicken.

German Pancakes
4 tbsp. butter
6 eggs
1 cup milk
1 cup flour
Dash of salt
1 tsp vanilla
Preheat oven to 425 degrees. Melt butter in a 9 x 13 pan in oven while it is preheating. Place eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish with melted butter. Bake for 20 minutes or until golden brown and puffy. Optional: once out of oven, sprinkle with powdered sugar and serve with syrup or Quick Mixed Berry Topping
Quick Mixed Berry Topping
2 cups frozen mixed berries
2 tbsp. sugar
1 1/2 tsp cornstarch
Toss berries, sugar and cornstarch in a large microwave-safe bowl until well combined. Microwave on high for 2 minutes. Stir and microwave on high until slightly thickened and steaming, about 2 1/2 minutes more. Serve with German Pancakes, angel food cake or topping for ice cream.
Delicious Berry Topping for Waffles and Pancakes
This is a wonderful berry sauce that is sweetened with juice concentrate instead of sugar. Pour over waffles, pancakes, or hot cereal for a special treat.
