Fatayer are savoury pies, which are filled with all sorts of delicious fillings. They are a great make ahead and freeze food, perfect for snacking on or serving at a party. Today I'll show you the perfect dough, and we'll be making the 4 classic flavours, Spinach, Cheese, Meat and Za'atar.

Cheese Filling: (makes 24)
250g Mozzarella, Akkawi, or Nabulsi cheese
200g Feta Cheese
20g Parsley
2 Eggs
1 Tbsp Nigella Seeds
1 Tsp Dried Mint
Spinach Filling: (makes 24)
250g Spinach
250g Onion
30g Pine nuts
2 Cloves Garlic
4 Tbsp Olive oil
2 Tbsp Lemon juice
1 Tbsp Sumac
1 Tbsp Pomegranate Molasses
1 Tsp salt
1/4 Tsp Pepper
1/4 Tsp Cayene pepper
1/4 Tsp Paprika
Meat filling: (makes 24)
250g Lamb mince or high fat beef
175g Tomatoes
125g Onion
1.5 Tbsp Tomato Paste
1 Tsp Salt
1 Tsp Paprika
1/2 Tsp Sumac
1/4 Tsp Pepper
1/4 Tsp Cayenne
Zaatar: (makes 8)
2 Tbsp Zaatar
2 Tbsp Olive Oil
Dough: (makes ~68)
1kg All Purpose Flour
540g Whole Milk or water
240g Vegetable Oil
4 Tsp Sugar
4 Tsp Dry Active Yeast
2 Tsp Salt
Directions:
Cheese filling:
Shred the cheeses, then roughly chop the parsley. Whisk the eggs, and then add to the cheese with remaining ingredients. Mix well to combine
Zaatar:
Mix to combine
Spinach filling:
1- Roughly chop the filling then add 1/2 Tsp salt and massage in. Allow to sit for 15-30 mins, then squeeze out all the water
2- Add half the oil to a pan, and toast the pinenuts until golden
3- Add the other half of oil to a pan, and add the onions, chopped to a small dice. Saute until soft and just turning golden
4- Once cooled add the onion, pinenuts and remaining ingredients to the spinach and mix together
Meat filling:
1- Dice your tomatoes and onions small, then place the tomatoes in a sieve to drain. Once drained add to a bowl with the meat and other ingredients
2- Knead together until well incorporated and the mixture can form a smooth log
Dough:
1- Heat your milk to a warm temp (28c) and then add the sugar and yeast. Mix together and let rest somewhere warm until frothy (15-30m)
2- In your stand mixer, add the flour and salt. Mix together briefly
3- Pour in the oil and mix to combine with the flour, until it is sandy and clumpy
4- Add the milk and combine, then knead for about 3 minutes until soft and it leaves no trace on your hands
5- Oil a bowl, and add the dough, then allow to rest for 30 minutes
6- After resting portion out into 25g pieces then shape and top them
To cook:
Run a timed test batch at your highest oven temperature. You want them to be turning golden on top, with a golden underside. Don't forget to oil the tray after every batch to ensure you get a lightly fried bottom

50g chopped onion
15g green onion
15ml olive oil
Mix well
Tortilla(23cm)
Fold and unfold the tortilla in half
Take some of the meat fillings
Put the filling on the tortilla
Spread the beef on half of the tortilla evenly
Sprinkle some mozzarella cheese
Fold the tortilla in half
Tortilla(17cm)
You can also make it with smaller tortillas
Fold than unfold in quarters
Cut the tortilla like this
Spread the beef filling on 3/4 of the tortilla like this

Repeat

Olive oil
Spread the oil every in the pan
Fry the tortilla for 5 minutes
Flip and fry for another 5 minutes
The color should be golden brown
Done!

Place the small tortillas in the pan

Brush oil on top
Flip then fry for 8 minutes
Add 1tbsp water in the pan
Done!

Turkish Bread That Drives Everyone Crazy! Bazlama is the tastiest I've ever eaten! Anyone can do it.
*This is the tastiest Bread I've ever eaten! Fluffy, Bubbly and Chewy Turkish Flatbread, No oven! Anyone can do it in their kitchen.* Grilled Flatbread that drives the whole world crazy. It is very tasty to eat with fried chicken or baked meat. This flat bread can be used as a base for a taco, pizza or sandwich. Just wrap it around your favorite food. This recipe has been proven over the years, the dough is tastier than in Turkish restaurants, I have been on vacation in Turkey several times and I am sure this is the recipe that makes me make this bread again and again. ????

*Recipe and ingredients for 6 pieces of flat bread:*
2 teaspoons dry yeast (10 grams).
2 teaspoons sugar (10 grams).
2/3 cup warm water (165 milliliters).
Add to bowl.
2/3 cup warm milk (165 milliliters).
Stir to dissolve yeast.
Cover for 10 minutes.
Sift 500 grams of flour (3 heaped cups).
Add 1 teaspoon salt (5 grams).
Add liquid with yeast and mix with a spoon.
1 tablespoon olive oil (15 milliliters).
Knead the dough by hand for 2 minutes.
The bread dough is very soft and a little sticky.
Cover the dough for 1 hour and leave in a warm place to rise.
The dough has doubled in size.
Sprinkle the table with flour and let the air out of the dough a little.
Divide into 6 equal parts.
Make balls.
Cover the dough so it doesn't dry out while you roll it out.
For convenience, you can use a silicone cooking mat.
Roll out the dough into a circle with a diameter of 18 centimeters (7 inches).
The thickness of the dough is about 5 millimeters.
Cook in a hot pan without oil.
On medium heat for about 3 minutes.
When bubbles appear, flip the bread.
This Turkish bread is similar to Naan bread in other regions of the world.
Cover hot flatbreads immediately with a tea towel to keep them soft.
All actions are very fast, while one bread is fried, we roll the next one.
Fry in a pan in the same way until the bread is golden brown on both sides.
Finely chop some parsley.
Brush each flat bread with olive oil.
Sprinkle with parsley.
Add red pepper to taste.
Nobody will ever mistake this for just another basic flatbread.
Perfect for slopping up your favourite curries – yet so good that you'll happily devour it plain, straight out of the skillet.
Fluffy, bubbly and chewy, just like you get at Turkish restaurants.

The Softest Pita Pockets EVER!
This homemade pita recipe is a game-changer! We’ve all had that dry pita bread from the grocery store. You know, the kind that crumbles when you try to open it to put the filling inside? This recipe is made with very basic ingredients and so easy to make. If you follow my recipe you will end up with the softest pita bread that you’ve ever had. Perfect for sandwiches, dipping in stews, party platters, or for slathering with butter and honey and enjoying with a cup of tea.

Makes 10 Pitas:
INGREDIENTS
The Dry Ingredients:
• 4 and ¼ cups (648 g) all-purpose flour
• 2 teaspoons salt
The Wet Ingredients:
• 1 cup (250 ml) lukewarm water
• 1 cup (250 ml) lukewarm whole milk
• 2 teaspoons active dry yeast
• 1 tablespoon all-purpose flour
• 2 teaspoons granulated sugar
• 2 tablespoons olive oil
INSTRUCTIONS
Combine the dry ingredients in a large bowl and whisk together. Set aside.
In the bowl of a tabletop mixer that is fitted with the dough hook attachment, add all of the wet ingredients except for the olive oil. Allow the yeast to activate for 8 minutes. As soon as a puffy cloud forms at the top of the mixture, the yeast is active.
Add the olive oil along with all of the dry ingredients and knead on low speed for 12 minutes.
Lightly grease a large bowl with 1-2 tablespoons of olive oil and transfer the dough to the bowl. Toss to coat in oil and cover with plastic wrap. Set aside in the warmest room of your home to rise until doubled in volume. About 1 hour.
Cut the dough into 10 equal portions.
Lightly flour your work surface and roll each portion of dough out into about 6-7-inch circles. Keep their thickness even. Use as much flour as needed to roll them out evenly.
Sprinkle some semolina flour onto the work surface and place each rolled out piece of dough on it.
Cover the dough with a clean kitchen towel and allow it to rise for 30 minutes.
Warm a cast-iron pan over medium heat.
Cook each pita 20-30 seconds per side and continue cooking until it puffs, and the pita is fully cooked (see video).
If the pita is not puffing up, increase the heat a little bit.
Transfer the pitas to a plate and serve immediately.
Leftover pitas can be stored in an airtight bag or container and kept in the freezer or the refrigerator until ready to use.
NOTES
Notes: To make whole wheat pitas, substitute 2 cups of whole wheat flour for 2 cups of all-purpose flour. This dough can be kneaded by hand. Knead it until it is no longer sticky. It should stay soft and tacky.
