Stuffed Bell Peppers Recipe
Ingredients
6 Large Green Bell Peppers
1.50 Lbs Ground Beef
16oz Sweet Italian Sausage
1 Large Onion, chopped
Success 10 Minute Rice
5oz Shredded Parmesan Cheese
1/2 Cup Beef Broth
30oz Canned Stewed Tomatoes
6oz Canned Tomato Paste
2 Tbs Worcestershire Sauce
2 Tbs Ketchup
2 Tbs Minced Garlic
2 Tbs Brown Sugar
1-1/2 Celery Salt
1 Tbs Oregano
1 Tbs Parsley Flakes
1 Tsp Crushed Red Pepper
1 Tsp Black Pepper
Instructions
1. Chop half of onion into small pieces and the other half into long thin slices.
2. Add stewed tomatoes, tomato paste, brown sugar, oregano, and crushed red peppers to a bowl, then stir in well.
3. Place a skillet over high heat.
4. Add ground beef, sweet Italian sausage meat, and onions to the skillet. Chop and break meat up with a wooden or plastic spoon, while it's cooking. Once meat has browned, add minced garlic, celery salt, garlic powder, and pepper, then stir in well then. Cook meat for 15 to 20 minutes.
5. Place a small pot of water over high heat. Once water comes to a boil, add rice. Boil for 10 minutes, then drain water.
6. Add meat, worcestershire sauce, ketchup, 1/3 of stewed tomato sauce mixture, 2/3rds of shredded parmesan cheese, and cooked rice to a big mixing bowl, then stir in well.
7. Place a big pot of water over high heat.
8. Chop off the top of the peppers. Remove and discard the seeds and interior.
9. Add beef broth, 1/2 of the remaining stewed tomato sauce, and the long onions to a baking pan.
10. Once big pot of water comes to a boil, add 2 peppers at a time and blanch for 5 minutes. Afterwards, place each pepper in the baking pan over the onions and sauce.
11. Allow peppers to cool for 10 minutes.
12. Preheat oven to 350 degrees.
13. Stuff the bell peppers with the filling.
14. Top with remaining stewed tomato sauce mixture.
15. Top with remaining shredded Parmesan cheese and parsley flakes .
16. Place in oven and bake for 30 minutes.

But know this is not your run-of-the-mill stuffed pepper recipe. The stuffed pepper recipe I am sharing with you today is of Spanish origin and heavenly influence by my Cuban background and travels. Stuffed pepper is a dish you rarely see at American restaurants but quite popular in Spanish-speaking countries colonized by Spain, such as Cuban, Puerto Rico, Dominican Republic, and Mexico. Although you can find it at Mexican restaurants throughout Texas and California, most of that time, they use chile peppers, Poblano, Cayenne, or Jalapeno. The traditional Spanish stuffed pepper recipe uses a simple, more mild, and sometimes sweet bell pepper variety, like Candy Bells, Cajun Belles, and the Islander in various colors ranging from green to yellow, red, or purple.
As I said in the video, this recipe for stuffed peppers with ground beef is not the classic Cuban style. Instead, it has a bit of an Italian meatball influence and the famous Mexican stuffed Poblano peppers recipe. One thing I will not be doing is adding rice! I don't know who came up with that idea, but in my opinion, it is a fail! The ???????????????????????????? ???????????????????????? ???????????????? ???????????????????????? ???????????????? is the protein of the dish and generally paired with white rice and some veggies. Not sure why you would put rice in it unless you are doing it to keep it moist! Well, not to worry. That is, of course, unless you use ground turkey or chicken. Been there, done that, ground beef or ground pork, or a mixture of the two is the way to go! This stuffed pepper recipe is tasty, tender, and moist. Truly my best-stuffed pepper recipe to date.

I think you don't see stuffed pepper serve at American restaurants more often because of the prep time. The dish is not very technical, but the preparation consists of four separately prepared components: the sauce, the ground beef, the onions mixture, and the bread crumbs. We will start by dicing our onion, garlic, pepper, and cheese bar. I will sauté the onion and the pepper with bacon. This is not the way I usually do this, but as they say, everything tastes better with bacon. You want to cook this slow until they get translucent, turn off the heat, and set it aside to cool off.
Next are the bread crumbs and milk. Finally, I added fresh chopped parsley, which is optional, but you can also use Italian-style bread crumbs. I started using plain bread crumbs a while back because the added salt kept throwing off my seasoning, and I kept getting salty mear balls and meatloaves.
The third step is the sauce. I, like many restaurants, Italian or not, use bottle sauce. However, rare is the occasion when I don't tweak it! What do I mean by this? Well, garlic, oregano, onions, and bell peppers, are usually a must, but salt and pepper are at times required as well!
With those three things out of the way, we can start seasoning the ground beef. Start by breaking down with a flat edge spatula, and after thoroughly mix your dry spices, start dusting it over the ground beef a little be at a time while mixing it. Once all the spices are incorporated, add the onion mix and the bread crumbs mix. Mix it well and let it sit for the herbs to penetrate the ground beef.
We now need to get our bell peppers ready for stuffing. I preferred to cut them across the top, but they are usually cut on the vertical axis in a classic Spanish recipe. Once cored and washed, we can get ready for the stuffing but not before adding our cheese cubes to the ground beef mixture. You don't have to used cubes, as I said in the video. But after having done this many times, I think they are the best option. Mix the cheese cube into the ground beef mixture and go ahead and stuff your peppers. The ground beef must be a bit wet. If dry, consider adding stock, tomato sauce, or milk. Once loaded, cover your peppers with the tomato sauce we did earlier and place it in the center of a preheated 325-degree oven for one hour. After the time has expired, raise the over temperature to 350. Take the stuffed peppers out of them over, and lay a couple of cheese slices over each of them. Put them back and bake for another 10 minutes or so! If you don't care about the melted cheese over it, bake undisturbed for 65 minutes. It has taken me many tries to get this stuffed pepper recipe perfected, and if you try it, there is a good chance you'll end up with the ???????????????? ???????????????????????????? ???????????????????????????? you have ever made!
