4 Meat Jambalaya : Turkey, Tasso, Andouille & Pork w/ Uncle Steve’s Shake
In this video I discuss jambalaya and demonstrate how to make a Cajun style jambalaya. This one had four meats in it, turkey, tasso, andouille, and pork. I used two varieties of Uncle Steve’s Shake, Thick Meat, and SpicyR. My teenage kids thought it was one of the best jambalayas I have ever made. I make jambalaya frequently and it is usually quite good. So my kids were really saying something when the said this one was one of the best.

Winetimes.ie Recipe - Beef Jambalaya
Winetimes.ie Barry Geoghegan with Sheona Foley of Cooks Academy create Beef Jambalaya
DIY - Hearty Jambalaya (One pan simple recipe)
Yet another simple recipe for a hearty jambalaya meal. The quantities noted in the video makes ALOT of jambalaya. Easily serves 8 people or just Pam and myself (multiple meals). I used Tony's Chachere's brand Jambalaya mix mainly because it's always on sale. Feel free to substitute in your own recipe. Same goes with the Rice A Roni I got.
Ingredients
1.5 lbs raw chicken (dark meat or white, dark meat tastes better though)
5 uncooked spicy Italian sausage links
20-25 raw shrimp (31-40 shrimp/pound)
1 box Tony Chachere's Creole Jambalaya Mix (or equivalent)
1 box Rice A Roni Long Grain & Wild Rice (or equivalent)
4 cups water
Cooking Time is about 1.5 hours, but there's very little effort required from the cook.
1) Toss the sausage and chicken into a large pan that also has a cover. Poor in the 4 cups of water and make note of the water line after submerging all the sausage and chicken into the water as much as possible. Turn on the heat, cover the pan, and when the mix is boiling cook for 23 minutes.
2) After the 23 minute cook time turn the heat down to low. Take out the sausage and chicken and cut them up into small bite size pieces. Do not toss out the water in the pan. Put the cut up sausage and chicken back into the pan and top off with water to the previous water line from step 1.
3) Pour in the Jambalaya and Rice A Roni and all included spice packets. Stir up everything in the pan and turn heat back up. Cover and set time for 20 minutes after the pan comes to a boil. Stir occasionally.
4) After the 20 mins of boiling from step 3 add in all the shrimp and spread them out. Cover and continue cooking for 5 more minutes.
5) Uncover and stir the shrimp into the jambalaya and continue cooking until almost all the water is boiled away. This will take about 5-10 more minutes. Stir occasionally.
That's it. Once all the water is boiled away, turn off the stove and serve up that sucka.
This is a pretty easy one pan recipe.
