How To make Beef Curry with Orzo

Greek-Eatz Part5 - Beef Giouvetsi(Beef Casserole with Orzo-Risoni)

The original recipe is made in the oven. Due to a malfunction of my oven I did a variation of the dish called Kritharoto which is like a risotto with orzo instead of rice.
Also most people add cinnamon and allspice, but I'm don't like them with this recipe.

Recipe:
-This can be made with lamb, chicken and basically with anything you like.
- For 3 servings
-350gr of beef - Dry brine with salt and pepper for 1 hour at least.
-Chop 1 leek 1 red onion and 3 cloves of garlic.
-Sauté the leek and the onion in extra virgin olive oil.
-When they are almost done add the meat and give it some color.
-Add the garlic and cook for 4 mins
-Add 3tbsp of tomato paste and cook it.
-Quench with 2 large shots of wine and let the alcohol evaporate.
-Add one can of chopped tomatoes(400gr-500gr) and the same amount of water.
-Add a beef stock cube and simmer in low heat for 2 hours with the lid on.
-Remove the lid near the end to let the water evaporate and get a thick sauce.
-You may need to add additional water. Check from time to time and stir.
- In large pan sauté 200gr Kritharaki(orzo or risoni) in olive oil to prevent it from going soggy.
-Add most of the sauce from the beef and 400gr of water in the pan.
-Work it like a risotto until its cooked through.
-Add more or less water( it depends on the temperature and how big your pan is)
-When its done and thickish add 50gr of butter and afew tablespoons of the Greek Cheese Mizithra: to bind it.
-Mix until smooth.
-Serve with the beef on top and some extra sauce on top or mix everything together in the pan.

How to cook beef with okra and serve with Orzo pasta soup.A favorite menu at home.

Ingredients for beef broth. 1/2 stewing beef ,1 big onion sliced, 3 cloves of Add cardamon ,bay leaves stock stir then pour boiled water add and cover simmer to cook until beef is cook completely .Season with black pepper.* For the okra 1/2 kilo trimmed and washed ,1 chopped onion, 1 tbsp cumin powder, 3 tbsp tomato paste, 6 tomatoes boiled peeled and chopped.* Heat tbsp ghee in frying pan over medium heat. Add okra and fry, tossing gently for 2 minutes. Add onion, cumin powder, tomato paste, and chopped tomatoes cook for 3 minutes. Divide cooked beef into 2 ovenproof or taggin or pottery casserole. Arrange okra on top of cooked beef cover and cook in oven for 20 or more minutes.... In a small frying pan. Heat Tbsp ghee over medium low heat. Add garlic and cook stirring constantly until golden.Remove from heat and stir coriander powder and fresh chili pepper sliced. Pour garlic mixture over okra and beef.....* To make the Orzo pasta soup. Fry orzo pasta in butter or oil until golden. Add boiled water and coverSeason with curry powder and cumin. until cook. and dry pour over beef broth
