tabasco sauce, to taste

edam, sliced 1/4 inch thick

bananas, sauteed, as an accompaniment
Directions:
In a skillet, cook onion in the butter over moderate heat until golden. Add the steak, tomatoes, and bell pepper. Cook, stirring, over medium-high heat, until vegetables are softened. Add the egg, raisins, olives, gherkins, and mushrooms and cook the mixture, stirring, for 1 minute. Add the brandy, heated, and ignite. Shake skillet gently until flame go out. Stir in flour and cook for 2 minutes, stirring. Stir in broth, chili paste, chili sauce, ketchup, tabasco, and salt and pepper to taste. Simmer the mixture, stirring occasionally, for 5 minutes.
Line the sides of a 2 quart shallow casserole with some of the cheese slices. Pour the beef mixture into the casserole, and cover it with the remaining edam. Put the casserole in a larger pan, add enough water to reach 1 inch up the sides of the casserole, and cover the pan with foil. Bake in the middle of a preheated 325 degree oven for 15 minutes. Serve with sauteed bananas.

RIJLA (PURSLANE) INSPIRED SPINACH & ADES || SPINACH & RED LENTIL STEW
This is a Sudanese/South Sudanese dish inspired by the stew rijla (purslane). Rijla is cooked with your choice of meat (lamb, beef, goat), lots of onions, tomato paste, ades (red lentil) & spices (mainly, black pepper, coriander and cumin powder).
INGREDIENTS LIST:
1 kg lamb curry with bones
3 large onions
3 boxes frozen spinach (250g each)
1 cup red lentils (500ml cup or 2 cups if you use the 250ml cup)
1 cinnamon stick
1 tablespoon coriander powder
1 tablespoon cumin powder
2 tablespoons vegetable stock powder
2 tablespoons tomato paste
1 tablespoon garlic paste
Canola oil
Salt to taste
Black pepper to taste
HOW MY FAMILY & I EAT THIS: I have served this with rice but it can also be with kisra (Sudanese flat bread), injera (Ethiopian flat bread) or asida/ugali (a popular East African staple dish made with maize flour).

Arabian kefta / Kofta Recipe / Kupta recipe
Kefta is an Arabian Version of Indian Kofta. It is one of the most popular Arabian dish prepared worldwide. You can have it for lunch , dinner or even for evening snacks. Kefta is prepared with minced meat mixed together with onion, garlic, paprika, parsley and cilantro. The mixture is shaped into small balls and cooked dipped in tomato based gravy. It goes very well with steamed rice.
Ingredients:
400gm minced meat
400 gm chopped tomato
1 tbsp Tomato Paste
1 Chopped onion
4-5 Garlic cloves
2 tsp cumin powder
2 tbsp chilly powder
1 tsp pepper powder
1/2 cup coriander finely chopped
1/2 cup Parsley finely chopped
Oil
salt to taste
Steps:
Chop all the vegetables.
Add chilly powder,2 tbsp oil, egg,black pepper powder and salt to a bowl and mix well.
Add chopped garlic,onion,blanched tomato paste,coriander leaves and egg mix to minced meat and mix well.
Grease your palm with some oil and shape the mixture into small balls and keep aside.
Heat pan on med high, when pan is hot, add oil.
Add chopped tomato,tomato paste,chilly powder, cumin powder,salt, chopped garlic and parsley. Mix well.
Cook covered till tomato gets dissolved.
Once gravy is done, add meat balls to the gravy and cook covered for 8-10 mins on low heat.
Remove from heat and serve hot with steamed rice.

Steak And Cheese Pie | Rump Steak And Edam Cheese | Real Steak Flavour | Cooking Around The World
With only a few ingredients I have encouraged the flavour of this rump steak to dominate the taste of this pie and the cheese just to compliment it. Use a good quality salt reduced beef stock and low sodium gravy powder, or you can even make a custom beef gravy form scratch. Do try it with the minimum ingredients first though. You can always add in more later.
500grams lean rump steak
1 tbsp olive oil
400mls low salt beef stock
1 tbsp beef gravy powder (or 1 tbsp cornflour mixed with 1 tbsp water)
1 tsp ground black pepper
2 sheets of flakey puff pastry
