Ingredients:
puff pastry - 400 g (14 oz)
egg whites - 3 pieces
sugar - 10 g (0.35 oz)
Tray size 35 X 40 cm (14 in x 16 in)
IN THE OVEN 180 °C (356 °F)/20 minutes
for the cream:
milk - 500 ml (16.9 fl oz)
Boil for 3 min
yolk - 3 pieces
sugar - 50 g (1.76 oz)
starch - 50 g (1.76 oz)
butter - 50 g (1.76 oz)
IN THE FRIDGE 30 min
whipping cream - 150 ml (5.07 fl oz)
blueberry jam - 200 g (7 oz)
for drink:
strawberries - 3 pieces
ice - 40 g (1.4 oz)
Schweppes - 100 ml (3.4 fl oz)
milk - 20 ml (0.7 fl oz)

1. Lox Croissant
You'll Need:
- 1 puff pastry sheet
- ½ cup cream cheese
- 3 tbsp whole grain mustard
- 1 zucchini, diced
- 4 oz smoked salmon
- 1 egg for the egg wash
- black sesame seeds
- salt & pepper to taste
Here's How:
Preheat the oven to 375°F. Place a mixing bowl on top of the puff pastry sheet and make a circular cut around the bowl. Divide the circular piece of dough into 8 equal sections. Spread 1 tbsp of cream cheese and 1 tsp of whole grain mustard in the center of each section. Place a few slices of smoked salmon on top and sprinkle with diced zucchini. Season with salt & pepper, roll each section of dough into the shape of a croissant, and transfer to a baking tray lined with parchment paper. Whisk 1 egg and brush the egg wash evenly over each croissant. Sprinkle black sesame seeds on top, transfer the baking tray to the oven, and bake at 375°F for 20 minutes.

2. Pepperoni & Cheese Roses
You'll Need:
- 1 puff pastry sheet
- tomato puree
- Italian seasoning
- 30 slices of pepperoni
- 12 slices of cheese
- 1 egg for the egg wash
Here's How:
Preheat the oven to 375°F. Cut the puff pastry sheet horizontally into 6 rectangular strips. Spread a thin layer of tomato puree over each strip of dough, leaving about ¾ inch uncovered on the right-hand side, and sprinkle Italian seasoning on top. Starting from the left-hand side of each rectangular strip, place 1 slice of pepperoni, 2 slices of cheese, and 4 more slices of pepperoni on the upper half of the strips of dough, leaving some dough uncovered at the bottom. Fold the uncovered part of the dough upwards. Starting from the left-hand side, roll up the each strip of dough to form the shape of a rose and transfer to a muffin pan. Whisk 1 egg and brush the egg wash over each rose. Transfer the muffin pan to the oven and bake at 375°F for 20 minutes.

3. Italian Sausage Twists
You'll Need:
- 1 puff pastry sheet
- 2 Italian sausages
- ⅔ cup shredded mozzarella
- baby spinach
- pepper
- 1 egg yolk + 1 egg for the egg wash
Here's How:
Preheat the oven to 375°F and whisk 1 egg yolk. Brush the egg wash down the left-hand side of the puff pastry sheet. Slice open the Italian sausages and squeeze the meat out directly onto the puff pastry sheet. Use a fork to spread the sausage evenly over the left half of the puff pastry sheet. Sprinkle with shredded mozzarella, top with fresh baby spinach, and season with pepper. Fold the right-hand side of the puff pastry over and press the edges together. Cut into 5 even strips. Twist each strip to make a spiral and place on a baking tray lined with parchment paper. Whisk 1 egg and brush the egg wash evenly over the surface of each twist. Transfer the baking tray to the oven and bake at 375°F for 20 minutes.

4. Chocolate & Banana Danish
You'll Need:
- 1 puff pastry sheet
- 1 milk chocolate bar
- 1 banana, sliced
- 2 tbsp sliced almonds
- 1 egg for the egg wash
- 1 tbsp sugar
Here's How:
Preheat the oven to 375°F. Place the chocolate bar in the center of the puff pastry sheet and make evenly-spaced diagonal cuts down both sides of the puff pastry dough. Slice the banana, place the slices on top of the chocolate bar, and sprinkle sliced almonds on top. Fold the strips of dough on the sides towards the center to cover the filling. Transfer the danish to a baking tray lined with parchment paper and pinch the top and bottom to seal it. Whisk 1 egg, brush the egg wash over the surface of the danish, and sprinkle sugar on top. Transfer the baking tray to the oven and bake at 375°F for 20 minutes.
