Corned Beef Brisket | NO BEER | Low FODMAP St. Paddy's Day FEAST | Gluten and Dairy Free
CELEBRATE St. Patrick's Day with this classic Irish recipe! You can serve it with all the fixings, or opt for the corned beef sandwich route. Either way, it's sure to satisfy without causing a flare up of digestive symptoms. To achieve that, this recipe skips the traditional beer and onions, without sacrificing flavor or tenderness. I like to slow cook this brisket in my instant pot, but feel free to use any crockpot that you might have. This recipe is also low fodmap, gluten free, and dairy free.
CAUTION: While this recipe is low fodmap, corned beef does contain nitrates which have been shown to covert into carcinogenic compounds within the body, which is why I choose to make this recipe only a few times a year. With the proper diet and lifestyle, your body should have no issues metabolizing and excreting these compounds every once in while. Also, DO NOT meal prep this recipes for yourself and eat it all week, that will probably give you a stomach ache. I limit it myself to two servings throughout the week.

OLD SCHOOL CORN BEEF AND CABBAGE ???? (HAPPY ST PATRICK DAY)
This is my recipe for the most awesome flavorful, juicy corn beef and you ever eaten and cooked
very easy simple recipe
OLD SCHOOL Corn beef and cabbage
3 lb corned beef brisket
1 lb carrots, peeled and chopped
1 lb. potatoes, red, white, or gold
1 onion, diced
1 head of cabbage, sliced or quartered
1 bay leaf
1/2 tsp. allspice
1/2 tsp mustard seeds
1/2 tsp black pepper corns
1/2 tsp whole cloves
water to cover the corn beef completely
Mustard Sauce
2 Tbsp. Dijon mustard
4 Tbsp. plain Greek yogurt
1 Tbsp. honey
Directions:
Place spices in spice grinder or blender to crush in small pieces
rub spices over brisket on top and bottom
Place onion and carrots in a stock pot Lay the corn beef on top and fill with water until the corn beef is completely covered.
Turn the heat on high and when it starts to boil, lower the heat to low and simmer covered for 1 hour for every pound of beef you have.
In my case, the beef weighed 3lbs so it will simmer for a total of 3 hours.
After 2 1/2 hours of cooking (or the last 30 minutes) add the potatoes. When the corn beef is done, remove it from the pot to another dish. Lightly cover with foil and let it rest for 15 minutes.
Once you remove the beef, add in the cabbage to the pot and simmer for 15 minutes more. You may have to bring the pot back up to a boil and then lower the temperature to simmer.
When it's time to eat, slice the corn beef across the grain into your desired thickness. Serve with the carrots, cabbage, and potatoes and the mustard sauce. Happy St. Patricks Day! Enjoy.

Easy.
Put the corned beef brisket in the crock pot; put it on high. Add some pepper and some of your favorite beer, dump the kraut overtop and walk away.
Somewhere between 4-8 hours later come back and enjoy.
You could add potatoes, carrots, other things. Or you could leave it alone.
Use the leftovers for Reuben Sandwiches; you're welcome! :)

1:27 Adding the onion and liquid
4:20 Adding the cabbage and carrots
7:38 Tasting the corned beef
INGREDIENTS
- 2-3 lb corned beef
- 1 large onion
- 2 cups beef stock
- 1 tbsp Worcestershire sauce
- 1 small cabbage (about 2 lb), cut in wedges
- 1 1/2 lb carrots, washed and cut in large pieces
INSTRUCTIONS
- Preheat oven to 350°F.
- Peel and slice the onion into wedges. Lay the onion in the bottom of the Dutch oven. Place the corned beef on top of the onion as if the onion wedges are acting as a roasting rack. Mix the Worcestershire with the beef stock and pour it into the Dutch oven around the corned beef. Cover the Dutch oven with the lid and place in the preheated oven until the meat is just beginning to become tender, about 2 hours.
- After the roast has been cooking for 2 hours, remove the roast from the Dutch oven and add the carrots and cabbage. Set the corned beef on top of the carrots and cabbage and cover with the lid. Return to the oven until the roast is easily tender when pierced with a fork, 1 to 1 1/2 hours.
- Slice and serve with carrots, cabbage, and crusty bread.
