How To make Basil Mint Orange Pesto
1 c Packed fresh basil leaves
1 c Packed fresh mint leaves
1/2 c Walnuts
2 tb Orange juice concentrate
-- (frozen), thawed 2 ea Garlic cloves
1/4 c Olive oil (or more)
In processor, blend first 5 ingredients until almost smooth. With machine running, gradually add 1/4 cup olive oil; process until smooth. If pesto is dry, mix in more oil by spoonfuls. Season with salt and pepper. (Can be made ahead. Press plastic wrap onto surface of pesto. Cover and refrigerate up to 2 days or freeze up to 1 week. Bring to room temperature before using.) Makes about 3/4 cup.

Such a versatile dip/sauce you can enjoy in a stir fry or with eggs or even as a chip & dip???? Fresh, herb-y and packed with flavour, here’s how you can make this Asian pesto:
1 cup basil
1 cup coriander
1/4th cup roasted peanuts
2 cloves of garlic - chopped
1/4th cup neutral oil
1/2th teaspoon chilli flakes
Salt & pepper to taste
1/4th stalk of lemongrass- chopped
Juice of 1 lime
1 teaspoon soy sauce
Pinch of sugar
Process:
• Start by blanching the herbs, add them to a pot of boiling water, shock them in an ice bath, set it aside (blanching keeps the pesto super bright & green)
• Blend the peanuts with the chopped lemongrass, garlic, soy sauce, lime juice, chilli flakes, salt, sugar & pepper
• Squeeze the herbs well and add them to the blender along with the olive oil & blend
• Adjust the lime & salt and blend one last time
• You can blend till it is smooth or a bit coarse
• Enjoy the pesto or store it by covering the surface with plastic wrap and wrapping the whole thing in foil. This ensures it stays green longer!

Fresh basil pesto is so easy to make and one of the most versatile condiments in Italian cooking. It originated in the region of Liguria and when made fresh the salty flavour just dances on your tastebuds.
When making your own pesto at home, the trick is to use fresh basil leaves – either from your own garden, the farmers market or your neighbours!
