How To make Basic Lamb Balti
4 Portions pre-cooked lamb
4 Cloves garlic, chopped
8 oz Onion, chopped
3 tb Ghee
4 tb Balti masala paste
8 fl Stock
1 tb Garam masala
2 tb Chopped fresh coriander leaf
Salt to taste Heat the ghee in the karahi: stir-fry the garlic very quickly. Add the onion, reduce the heat, and fry until translucent and starting to brown. Add the meat and the Balti masala paste. Turn the heat up and stir-fry for about 5 minutes. Slowly add the stock, and simmer on low heat for about 10 minutes. Then check the meat for tenderness: add stock or water if required. When almost tender enough, add the garam masala and coriander leaves. Salt to taste: simmer for another 15 minutes. Serve with naan bread.

In this video I have explained step by step in detail how to make a mutton curry using basic common ingredients. If you master this recipe then you will be able to make any type of mutton curry.
Ingredients required for making mutton curry - serves 6 to 8
* 1.2 kg/ 3 lb mutton or lamb with/without bones. The shoulder and leg piece is the best.
* 500 gm/ 1 lb/ 3 large onions
* 40 gm/ 2 oz ginger
* 50 gm garlic / 1 whole head of garlic
* 2 green chillies (optional)
* 200 gm/ 7 oz/ 3/4th of a cup of plain unflavored yogurt
* 1 tablespoon Kashmiri red chilli powder. Please adjust proportion according to your preference.
* 1 teaspoon turmeric powder
* 1 tablespoon ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1 heaped teaspoon garam masala powder
* 2 dried bay leaves
* 4 to 5 green cardamoms
* 4 to 5 cloves
* 2 inch long cinnamon stick
* 2 teaspoons salt or as per taste
* 4 large potatoes cut into half (totally optional)
* hot water
* 3 to 4 tablespoons oil
Serve this with rice/roti/naan/paratha. The taste of any meat curry gets better the next day.

►Ingredients For the Lamb Karahi
►Spices
2 tsp ground coriander
2 tsp cumin
2 tsp garam masala
2 tsp red chili flakes
2 tsp red chili powder
1 tsp black pepper
1/2 tsp turmeric
1.5 tbsp fenugreek powder
►Main Ingredients
1.2 kg or 2.6 lbs lamb
2 onions
8 garlic cloves
1 and half inch ginger (35 - 40g)
4 medium ripe tomatoes
2 - 3 green bullet chilies
Some finely chopped coriander
►Cooking Karahi
►Lamb Prep
7 tbsp sunflower oil
1 tsp salt
Half of the ginger/garlic
►Lamb Karahi Prep
3 - 4 tbsp oil
1/2 tsp salt or salt to taste
1 cup water
70g butter
4 - 5 tbsp natural yogurt
1/2 tsp black pepper
►For the Salad
1 onion (Apply some salt and wash it after 10 min)
1 cucumber
2 tomatoes
1/2 preserved lemon without skin
Some gherkins
Some green pickled chilies
Some finely chopped coriander
Olive Oil
Salt Pepper
►For the Rice
2 cups basmati rice (wash and soak for 30 min)
3 cups water
► Spices
2 tsp salt
1 tsp black pepper
1 tsp red chili
1 tsp garam masala
1/2 cassia bark

7 green cardamom crushed
2 bay leaves
2 tsp cumin seeds
►Cooking Rice
7 tbsp oil
2 onions

How to make Lamb Balti at home | No Base Gravy Needed
Easy Lamb Balti recipe made with fall apart tender lamb and delicious aromatic homemade curry sauce. If you love Indian restaurants curries, you will definitely enjoy this lamb curry.
Full Recipe Detail ▶️
???? Ingredients
▢500 g Boneless lamb
▢3-4 Onion Shallot onion or brown onion
▢4 cloves Garlic Finely grated/paste
▢1 tbsp Ginger Finely grated/paste
▢2-3 Tomatoes Vine ripened tomatoes
▢2 tbsp Oil Vegetable, canola, sunflower or neutral flavoured oil
▢1 tbsp Ghee Or unsalted butter
▢2 tsp Salt Or salt to taste
▢1½ cup Water Warm water, add more water if needed
▢2 tbsp Yoghurt Natural yoghurt or plain full fat yoghurt
▢3-4 Green chilli Cut half lengthways
▢handful Coriander Roughly chopped
▢½ tsp Garam masala To add in the finishing
Spices
▢2-3 Bay leaves
▢4-5 Green cardamom
▢1 tsp Cumin seeds
▢1 tsp Turmeric
▢1 tsp Chilli powder
▢1 tsp Garam masala
▢½ tsp Coriander powder
Cooking Instruction
Saute bay leaves, cardamom, cumin seeds with ghee for a few seconds.
Add the onions and cook for 2-3 minutes follow with the grated garlic, ginger and stir well until the onions are slightly brown.
Next add the lamb pieces and continue stir until the meat is no longer pink.
Then add the spices, turmeric, chilli powder, garam masala, coriander powder, and salt to taste.
Cook for another 1-2 minutes and add the chopped tomatoes and cook until soft.
Pour the water and cook with low-medium heat for 45 mins to 1 hour until the lamb is soft and tender and stir occasionally.
Now stir in yoghurt and continue cook for another 4-5 minutes. Turn off the heat and sprinkle ½ tsp of garam masala, chopped coriander and fresh green chillies.

Balti. So what is it ? Strictly speaking, it's a curry invented in Birmingham UK, and cooked in a Korai or Wok, and served in the same or similar container. There's much info on Balti on Wikipedia at I prefer to think of a Balti as a verytasty curry, quite heavy on the Garam Masala spices.

This makes a batch (more than the 5 TBSP required for this recipe). All the following ingredients chopped & blended to a paste...
30-40g Onion, 2-3 Red Chillies (Optional. Seeds removed unless you like heat), 2-3 TBSP Fresh Coriander Stalks, 4 Cloves Garlic, 2 cm chunk of Fresh Ginger
1.5 TBSP Tomato Purée (double concentrated) + 4-5 TBSP Water, OR 5-6 TBSP Blended Tinned Plum Tomatoes
1 TBSP Tamarind Paste, or 2 tsp Tamarind Concentrate, or 1.5 TBSP Tamarind Sauce/Juice
2 tsp Mango Chutney
2 tsp Poppy Seeds (Optional)
1 TBSP Onion Paste (Optional)
