How To make Barbeque Sauce 2
SEASONING MIX:
1 1/2 t Black pepper
1 t Salt
1 t Onion powder
1 t Garlic powder
1/2 t White pepper
1/2 t Ground cayenne pepper
MAIN INGREDIENTS:
1/2 lb Bacon, minced
1 1/2 c Chopped onions
2 c Pork, beef or chicken stock
1 1/2 c Bottled chili sauce
1 c Honey
3/4 c Dry roasted pecans, chopped
5 T Orange juice (1/2 orange)
Rind & pulp from 1/2 orange 2 T Lemon juice (1/4 lemon)
Rind & pulp from 1/4 lemon 2 T Minced garlic
1 t Tabasco sauce
4 T Unsalted butter
Combine the seasoning mix ingredients in a small bowl and set aside. In a 2-quart saucepan fry the bacon over high heat until crisp. Stir in the onions, cover pan, and continue cooking until onions are dark brown, but not burned, about 8 to 10 minutes, stirring occasionally. Stir in the seasoning mix and cook about 1 minute. Add the stock, chili sauce, honey, pecans, orange juice, lemon juice, orange and lemon rinds and pulp, garlic, and Tobasco, stirring well. Reduce heat to low; continue cooking about 10 minutes, stirring frequently. Remove orange and lemon rinds. Continue cooking and stirring about 15 minutes more to let the flavors marry. Add the butter and stir until melted. Remove from heat. Let cool about 30 minutes, then pour into a food processor or blender and process until pecans and bacon are finely chopped, about 10 to 15 seconds. This sauce may be used to barbecue chicken, pork or ribs. Makes about 5 Cups. From Paul Prudhomme's "Louisiana Kitchen"

BBQ sauce can be an excellent way to finish off food that is cooked on the smoker or simply served up as a sauce for other grilled foods as well. The sauce in general has a very long rich history and BBQ specifically sauce originally was more of a butter sauce that included cayenne and fresh herbs. The earliest recordings believe African American slaves and Creoles were the first to introduce the sauce to the new Western world and for good reason considering their history with smoked meats.

Homemade Barbecue Sauce
Chef Jason Hill shares his homemade barbecue sauce recipe in this episode of Chef Tips. This easy homemade barbecue sauce calls for a dry spice mix of:
1 tablespoon chili powder
1 tablespoon Hungarian paprika
1 teaspoon turmeric or Coleman's dry mustard
1 teaspoon ground cumin
1/4 teaspoon ground cloves (optional)
1/4 cup brown sugar
followed by
1 cup ketchup
1/4 cup apple cider vinegar
1/4 cup water
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon Jason's garlic shallot purée (or 2 cloves mashed garlic)
1 teaspoon coarsely ground cracked black pepper
Mix well, and place this simple barbecue sauce in a pot. Cook over low heat for 30 minutes, stirring occasionally and keeping care that it doesn't burn. Allow to cool completely in the refrigerator, allowing flavors a few hours to meld. Store in the refrigerator up to 2 weeks.

Ingredients :
Tomato ketchup : 1/2 cup
Red chilli sauce/hot sauce : 2 tea spoons
Worcestershire sauce : 2 tsps
Garlic powder : 1 and 1/2 tea spoons
Onion powder : 1 tea spoon
Vinegar : 2 tea spoons
Brown sugar : 1/4 cup or 3 table spoons
Chilli powder : 2 tea spoons
Mustard powder : 1 tea spoon
Pepper powder : 1 tea spoon
Salt to taste
Butter : 1 table spoon
