58 CALORIE SUPER SOFT BANANA BREAD- Low calorie banana bread
I've created this low calorie banana bread recipe after so many requests. This tastes just like regular banana bread but the only difference is that in the calories. The regular banana bread slice has 200 calories while this version has only 58 Calories per slice.

Egg: 1, medium (58-60 grams)
All purpose/Whole wheat flour: 1 cup (150 grams)
Baking soda: 1 teaspoon (5 grams)
Ripe bananas: 2, small (200 grams)
Vanilla essence: A few drops
Artificial sweetener: 1/2 cup (70 grams)
Unsweetened applesauce: 1/2 cup

▶️ RECIPE INGREDIENTS: (6 medium size muffins)
170g / 1 Cup Whole wheat flour
60g / 1/3 Coconut Sugar or Palm sugar (if you like it sweeter you can add 1/2 cup instead)
1 Teaspoon Baking powder
1/4 Teaspoon Baking soda
1/4 Teaspoon Salt (I have added pink Himalayan salt)
350g / 1+1/4 cup Mashed Banana
4 Tablespoon Olive oil
1 Tablespoon Ground Flaxseed
3 Tablespoon Water
1 Tablespoon White Vinegar
1 Tablespoon Vanilla extract
[Note for Non-Vegans: 1 Tbsp Ground Flaxseed + 3 Tbsp Water = 1 egg replacement]
Toppings:
Walnuts - chopped or nuts/seeds of choice
Semi-Sweet Chocolate Chips
▶️ 6 cup Muffin Tray

▶️METHOD:
Preheat the oven to 350F. Brush a 6 cup muffin tray with oil OR line it with muffin paper liners and set aside for later.
Add the whole wheat flour, coconut sugar. Baking powder, baking soda, salt to a bowl and mix it thoroughly. Set is aside. Now to another bowl, mash the banana and add olive oil, ground flaxseed, white vinegar, vanilla extract, water and mix it well until combined thoroughly. Now add the dry ingredients and mix it gently until just combined. (Please DO NOT over mix it, otherwise the muffins will turn out dense).
Scoop the batter into the muffin cups and top it with chopped walnuts/ semi-sweet or dark chocolate chips. Bake in a 350F preheated oven for about 35 minutes. The baking time depends on the heat/type of your oven so adjust the baking time accordingly. Once baked remove it from the oven and let it cool down. Enjoy it for breakfast or just as a healthy snack.
These muffins freeze very well and are perfect for meal planning.

I have made this both as a loaf and as muffins, and both are DELICIOUS. But for me personally, having muffins helps me a little more with my will power and self control :)

Ingredients
For the muffins
* 3 large ripe bananas
* 3/4 cup white sugar
* 1 large egg
* 1/3 cup vegetable oil
* 1 1/2 cups all purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg (optional)
* 3/4 cups chopped walnuts
For the topping
* 3/4 cups chopped walnuts
* 2 tablespoons brown sugar
* 1 tablespoon melted butter
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
* Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
* Add the vegetable oil and mix well.
* Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
* Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
* In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
* Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
* Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
* Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

Peanut Butter Protein Bites
Here is what you'll need!
RECIPE:
Yields: 16-18 balls
INGREDIENTS
2/3 cup creamy peanut butter
1 cup old fashioned oats, plus extra for rolling
1 1/2 tablespoons honey
1/4 cup miniature chocolate chips, plus extra for rolling
1/4 cup flax seeds (optional)
PREPARATION
Mix all ingredients in a bowl until well-combined.
Cover with plastic wrap and chill in the refrigerator for at least 30 minutes
Once done chilling, roll into approximately 1 inch balls. (Cover hands in a light layer of butter or oil to facilitate rolling and avoid getting sticky hands.)
Lay out a thin layer of oats and chocolate chips on a cutting board or work surface and roll the balls in the mixture. Finish off by rolling each ball between your hands to pack in the oats and chocolate chips.
Store in the refrigerator until ready to be eaten. Enjoy!
