How To make Banana Lime Bread
1/2 c Shortening
3/4 c Brown sugar
2 tb White vinegar
3 Ripe bananas, mashed
3 tb Water
1 tb Lime juice
1/2 ts Salt
1/2 ts Ginger powder
3/4 c Coconut, grated
1 ts Baking powder
2 c White flour
GLAZE 1/4 c Brown sugar
1 tb Oil
1 tb Rum
3 tb Lime juice
Beat shortening for a few seconds. Add brown sugar & beat till well blended & creamy. Stir in vinegar, bananas, water & lime juice. Ensure that all ingredients are well mixed. Add salt, ginger & grated coconut. Mix well. Stir in baking powder. Sift flour & beat with a wooden spoon till well blended & smooth. Transfer into a greased loaf pan & bake at 350F for 1 hour. Let cool for 10 minutes before removing from pan to a wire rack.
Meanwhile, combine brown sugar, oil, rum & lime juice in a snall pot over a low heat. Stir constantly for 5 minutes until you have a thin syrup. Pour over the loaf, spreading it with a spatula, let it run over the sides. Adapted from "Sundays at Moosewood Restaurant Cookbook"

hello everyone! today I will share with you my banana bread with a twist! please give it a try and let me know if you will like it. have fun !
ingredients
*mango mixture
2 pcs mango cubed
2 T butter
2T brown sugar
1T lemon zest
1T lime juice
in a pan, saute mango with butter and sugar about 8 mins high heat. take it out in the pan and transfer to a bowl and add juice and zest. cool down.
*Banana like mixture
2 c of overripe banana - preferably frozen and thawed overnight.
2T lime juice
puree together. set aside
* Nut fruit mixture
1 c walnuts crushed
1 1/2 c milk chocolate chips
1/4 c Flour
*mango mixture
mix walnuts and chips with flour first then add the cold mango mixture. set aside.
*Batter
1 1/4 c softened butter
1/2 t salt
1 c sugar
4 L eggs lightly beaten
2 1/4 c banana puree
4 1/4 c flour -sifted
1/2 baking soda-sifted
2T baking powder- sifted
Beat the butter and sugar until smooth and fluffy. gradually add eggs at a time continue mixing. add half of the flour , baking soda, baking powder mixture and add the banana puree then add the remaining flour. Mix until incorporated. Transfer to a greased loaf pan and bake to an hour to a preheated oven at 350 F or 180 C high.
for the glazed.
3T like juice
1 1/2 c powdered sugar
mix all together until it becomes paste like texture. drizzle on top of the cooked banana bread and put it back in the oven for 60 seconds.

Coconut Lime Loaf Recipe | Banana Bread Alternative | Paleo Recipe | Thermomix Recipe
Coconut Lime Loaf
195g almond meal
3 Tablespoons coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
Zest and juice of 2 limes
1/2 teaspoon vanilla powder
3 eggs
90g coconut milk
125g raw honey
45g melted coconut oil
Preheat oven to 175 degrees Celsius. Prepare and line a loaf tin with baking paper.
Add all dry ingredients and combine 4secs/speed4.
Add all wet ingredients combine 20secs/speed4. Scrape down sides and repeat if necessary. Do not over mix. Rest in tin for 5 mins before placing in preheated oven.
Bake approx. 25-30mins until golden brown and skewer comes out clean.
Cool in tin.
This can also be made in a food processor, cake mixer or in a large bowl.
Place all dry ingredients in a bowl and mix until combined. In a separate bowl mix together all wet ingredients until well combined. Add to dry ingredients and stir together until all dry ingredients are mixed in. Don’t over mix. Then pour into loaf tin and cook as above.
Note: If you are using coconut flour for the first time the ratio is usually 1:4 what you would usually use with wheat flour.
