OAT FLOUR BANANA BREAD RECIPE
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup coconut sugar
1.5 cup mashed bananas (about 2 large bananas or 265grams)
3 eggs
1/4 cup refined coconut oil, melted
2 teaspoons vanilla extract
1/3 cup semi-sweet chocolate chips
Preheat the oven to 350°F. Grease and line an 8”x4” loaf pan with parchment paper so the parchment overhangs the sides of the pan for easy removal once the cake is baked. Set aside.
In a large bowl, whisk together the oat flour, baking soda, baking powder, cinnamon, and coconut sugar.
In a separate large bowl, whisk together the mashed banana, eggs, melted coconut oil, oat milk, and vanilla extract.
Pour the liquid mixture into the dry ingredients and stir until just combined. Then, mix in ½ cup of chocolate chips.
Transfer the batter to the prepared baking pan and sprinkle with 2 tbsp chocolate chips. Bake in the center rack of the oven for 55-60 minutes or until a toothpick inserted into the center of the cake (not near a melted chocolate chip) comes out clean.
Transfer the loaf pan to a wire rack to cool for 10 minutes. Then, lift up the parchment paper overhang to carefully remove the bread from the pan allowing it to cool on the wire rack for another 20-30 minutes before slicing.
Serve warm, once slightly cooled, or at room temperature.
NOTES
Storing leftovers: This will stay fresh when covered at room temperature on the counter for up to about 2 days. To store for up to about 5 days, place slices in an airtight container or bag in the fridge. To enjoy warm slices, heat in the microwave for about 10-15 seconds or in a toaster oven for a short time.
Freezing: To store in the freezer, tightly wrap the whole loaf in plastic wrap, then place it in a resealable bag and freeze for up to 3 months. Thaw at room temperature, when you’re ready to enjoy it. You can also wrap individual slices in plastic wrap and store them in a resealable bag. Thaw slices at room temperature or microwave them for about 20-30 seconds.

Recipe for Gluten-free Oat Flour Banana Bread :
300g gluten-free rolled oats ( 3 C )
3 medium bananas
100g honey ( 5 tbsp )
120g greek yogurt ( 1/2 C )
1 large egg
6g sea salt ( 1 tsp )
2 tsp wine stone baking powder (cream of tartar)
1 tbsp vanilla essence
1 tsp cinnamon
Preparation:
Mix wet ingredients:
- Peel bananas, and mash them with a fork. Stir in one egg, add greek yogurt, vanilla essence, and honey.
Mix dry ingredients:
- In a food processor put rolled oats, salt, wine stone baking powder, and cinnamon and blend it all together until flour texture is formed.
Mix wet into dry ingredients:
- Put this flour mixture into a mixing bowl and add dry ingredients.
Mix lightly to combine them.
- Prepare the baking pan with baking paper.
- Put the mixture into the baking pan and sprinkle some rolled oats.
- Bake at 180° Celsius ( 356 F ) for 50 minutes.
- Let it cool. It's best to cut the bread when it has cooled completely.

INGREDIENTS:
* 2 3/4 cups oat flour OR grind 3 cups + 2 tbsp rolled oats (310 g)
* 1/4 teaspoons baking soda
* 2 tsp baking powder
* 1/4 teaspoon fine salt
* 2 eggs
* 1/4 cup unsweetened oat milk (60 g) or any type of milk
* 1 1/3 cups mushed banana (400 g) about 3,5 large bananas
* 1/3 cup honey or maple syrup (113 g)
* 2 teaspoon cinnamon
INSTRUCTIONS
1. Preheat oven to 400F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
2. Mix dry ingredients. Grind oats in a blender or food processor until they reach a flour-like consistency. Add in cinnamon, baking soda and baking powder, and whisk until the mixture is evenly combined. Set aside.
3. Mix wet ingredients. In a separate large mixing bowl, whisk together the eggs, milk, mashed bananas, honey until evenly combined.
4. Fold the dry ingredients in with the wet ingredient mixture, and stir until the mixture is just combined. (Try to avoid over-mixing.) Let the mixture sit for 5 minutes
5. Pour the batter into the bread pan and spread it out evenly.
6. Bake for 30 minutes at 400 F (200 C) Don’t open the oven!, then reduce the heat to 325 F (160 C) and bake another 15-20 minutes, until a toothpick inserted in the center of the bread comes out clean. Remove pan from the oven and place on a cooling rack for 10 minutes.
7. Serve warm. Or let the bread cool to room temperature, then store in a container for up to 3 days, or freeze for up to 3 months.

DOUBLE CHOCOLATE BANANA BREAD
2 cups extra fine almond flour (I use Bob’s Red Mill)
6 tablespoons cacao powder
1.5 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 brown bananas, mashed (12-14 ounces)
2 eggs
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 cup chocolate chips
Preheat the oven to 350 (180 C) degrees. Line a loaf pan with parchment paper.
In a large bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda and salt.
Place the bananas in a medium bowl. Use a potato masher or fork to mash the bananas until they’re almost smooth.
Add the eggs, maple syrup, and vanilla to the bananas and mix until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Add half of the chocolate chips and stir them in.
Carefully pour the batter into the prepared loaf pan. Sprinkle the remaining chocolate chips evenly over the top of the batter.
Bake for 45-50 minutes, or until the bread is fragrant and set through the center. Cool completely. Remove from the loaf pan, slice, and enjoy!

1/2 cup (170g) Honey/maple syrup/agave
1/4 cup (60mll) Milk of choice
1/4 cup (60ml) vegetable or canola oil
1 teaspoon Vanilla puree or extract
1/2 teaspoon Almond extract (optional)
1 tablespoon Lemon juice
1½ teaspoons Baking powder
3/4 teaspoon Baking soda
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
1¾ cups + 1 tablespoon (165g) Gluten-free oat flour
1 cup (100g) Almond flour
Directions:
1. Preheat oven to 350°F (180°C). Line a 8X5-inch (20X12cm) loaf pan with parchment paper. Grease the sides of the pan with oil or butter and set aside.
2. In a large bowl, mash the bananas. Add eggs and whisk until combined. Add honey/maple syrup, oil, yogurt, vanilla and whisk until combined.
3. In a separate bowl whisk oat flour, almond flour, baking powder, baking soda, cinnamon and salt.
4. Add dry mixture into wet mixture and stir until just combined.
5. Pour the batter into prepared pan. Top with two banana halves coated with brown sugar. Bake for 45-55 minutes or until a toothpick inserted into the middle of the loaf comes out clean. If after 30 minutes in the oven, the bread turns too brown, cover with foil for the rest of baking.
6. Allow the bread to cool in the pan for 10 minutes, release from the pan and allow to cool completely.
