Yellow Squash Casserole is a classic Southern side dish. Sliced squash is baked in a cheesy cream sauce and topped with a buttery cracker crumble. It is always a favorite!

✅Ingredients
• 1 tablespoon canola oil
• 3 pounds yellow squash, sliced
• 1 white onion, diced
• 1 teaspoon salt
• 8 ounces sour cream
• 1 cup shredded cheddar cheese
• 1/2 cup grated parmesan cheese
• 1 large egg
TOPPING:
• 1 sleeve Ritz crackers, crushed
• 2 tablespoons butter, melted
• 1/4 cup grated parmesan cheese
✅Instructions
1️⃣ Preheat oven to 350 degrees. Lightly grease a 9x9 baking pan or casserole dish.
2️⃣ 00:00:16 - Heat canola oil in a large skillet over medium high heat. Add in squash and onion and season with salt. Cooking, stirring frequently until squash just starts to soften and liquids have been released, about 7 to 10 minutes. Drain well.
3️⃣ 00:01:04 - In a large mixing bowl stir together sour cream, cheddar cheese, parmesan, and egg until well combined. Add in squash and gently fold until well coated. Pour into the prepared baking pan.
4️⃣ 00:01:55 - In another small bowl, toss together crushed crackers, butter, and parmesan cheese. Sprinkle over the top of the squash.
5️⃣ 00:02:25 - Bake at 350 degrees for 20 to 25 minutes, uncovered, until topping is lightly browned. Serve hot.

Squash casserole is a staple dish found at meat-and-three diners and at church potlucks.

Ingredients:
6 tablespoons unsalted butter, divided 3 pounds yellow squash, sliced
1/4 inch thick (from 5 medium squash)
1 medium-size yellow onion, chopped (about 1 1/2 cups)
2 teaspoons kosher salt, divided
2 large eggs, lightly beaten
1 (8-oz.) container sour cream
4 ounces sharp Cheddar cheese, shredded (about 1 cup)
2 ounces Swiss cheese, shredded (about 1/2 cup)
1/2 cup mayonnaise
2 teaspoons chopped fresh thyme
1/2 teaspoon black pepper
2 sleeves round buttery crackers (such as Ritz), coarsely crushed
1 ounce Parmesan cheese, shredded (about 1/4 cup)

The BEST Zucchini & Squash Casserole
A healthy squash casserole recipe that is made with yellow squash, zucchini, a crunchy breadcrumb and Parmesan topping and then baked in the oven to crispy perfection! This easy summer squash and zucchini casserole is a wonderful side dish casserole recipe to serve up for summer picnics or at your Thanksgiving table!
RECIPE:
INGREDIENTS:
2 lbs summer squash zucchini and yellow squash, cut into ¼-inch slices
2 ½ Tbsp olive oil
1 ¼ tsp salt divided
½ tsp pepper
⅓ cup Parmesan cheese* grated
⅓ cup Panko breadcrumbs gluten-free
2 Tbsp fresh parsley finely chopped
INSTRUCTIONS:
Preheat oven to 350 degrees.
Cut yellow squash and zucchini into thin, ¼-inch slices.
Sprinkle ½ teaspoon salt over the zucchini and squash slices. Let sit for 10 minutes and then dab to remove excess moisture with a paper towel.
Spray a 9-inch square baking dish with non-stick cooking spray.
Alternatively, overlap the zucchini and squash in a row. (See pictures.) You should be able to form 4 rows.**
Drizzle olive oil over the zucchini and squash and then sprinkle with salt and pepper.
In a small bowl combine Parmesan cheese and breadcrumbs. Toss to combine and then sprinkle over the zucchini and squash.
Cover baking dish with aluminum foil and bake in preheated oven for 30 minutes.
Remove foil and turn heat to a High broil. Broil for an additional 5-7 minutes, or until breadcrumb topping starts to turn a golden brown.
Serve immediately with fresh parsley and enjoy!

Recipe:
6 medium thinly sliced yellow squash
1 large onion
4 tablespoon butter
1/2 cup grated parmesan cheese
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
1 sleeve crushed buttery crackers
Preheat oven 350, spray your dish, 2 tablespoon butter in skillet and cook the squash until tender, cook onions separate from squash, you can boil the squash if you want to, combine all ingredients, mix well leave crackers out, pour mixture into pan, heat 2 tablespoon butter, mix cracker crumble into it, pour over mixture, bake 20-30 minutes or golden brown.
