How To make Baked Orzo with Peppers and Cheese
2 teaspoons salt
1/2 cup roasted red peppers
diced
1/3 cup green chili peppers :
diced
1 cup fat-free sour cream
2 tablespoons butter cut into sm. bits
1 cup orzo
1 cup lowfat mozzarella cheese :
diced
1/2 cup parmesan cheese -- grated
1. Add 2 teaspoons salt into boiling water, add orzo; boil 10 to 12 minutes un til tender; drain. 2. Put orzo into lightly buttered dish with peppers, chilies and Monterey Jack . 3. Spread sour cream evenly over top, sprinkle with Parmesan cheese, dot with butter. 4. Bake at 450 degrees for 15 minutes, top shelf of oven until golden puffy. Cool slightly.

Tonight I made a corker of a dish! One pot chicken with orzo cooked in tomato sauce and peppers. Popped in some sundried tomatoes in there for a bit of umami. Also some cheeky banana bites mid shot, a girl needs to snack while cooking right?
Greek Orzo with Feta & Olives: Ready in 30 mins!

Ingredients
1/4 cup olive oil
1/2 red onion, finely chopped
3 garlic cloves, grated
2 cups orzo pasta
4 cups hot chicken or vegetable broth
1/4 cup lemon juice
2 roasted red peppers, chopped
1/2 cup frozen green peas
Kalamata olives, chopped
6 oz (150g) feta cheese, crumbled
1 tablespoon capers
1-2 tablespoons finely chopped parsley
Instructions
Heat a skillet over medium heat.
Add olive oil and onion and cook until soft and golden.
Add the garlic and heat until fragrant.
Add the orzo and cook until toasted.
Add the hot broth, 1-2 teaspoons salt, peas, roasted red peppers, olives, and lemon juice. Bring to a boil and reduce the heat to low. Simmer for 12 minutes.
Add the capers and and feta cheese, toss together. Warm through for 2-3 minutes.
Garnish with parsley and serve.

Spicy Baked Orzo [Vegetarian]

Ingredients:
1 cup Orzo
1 Red Bell Pepper (chopped)
4 oz. Diced Green Chilies
1 cup Shredded Monterey Jack Cheese
1/2 cup Sour Cream
1/2 cup Parmesan Cheese
Instructions:
Preheat oven to 350º F.
In a medium sauce pan, bring 2 cups of water or stock to a boil. Drop temperature to low and add orzo. Cover and allow to cook for 15 minutes or until the orzo has absorbed all of the liquid.
In a 2 quart prepared casserole dish, add orzo, peppers, and Monterey Jack. Mix thoroughly.
Spread sour cream over the top, and top with parmesan cheese.
Bake for 20 minutes.

4. Let it bake and bubble for about 25 minutes or until Risoni feels just right.
5. Once done, out it comes! Toss in the spinach, a splash of lemon, and generous heaps of Parmesan. Give it a good stir to get that spinach wilted and cheese all melty. Top it with some extra Parmesan if you're feeling cheesy ????
