How To make Baked Herberd Chicken
1 lb Chicken breast; boneless &
-skinned 2 ts Virgin olive oil;
6 tb Dry white wine;
1/4 c Lemon juice;
2 ts Leaf tarragon; dried
2 ts Leaf basil; dried
1/2 ts Hot red pepper flakes;
Preheat the oven to 350 degrees. Trim any fat from chicken breast and pound lightly between two sheets of waxed paper to flatten. Coat with olive oil and place in a baking dish. Add wine, lemon juice, herbs and and pepper flakes, turning chicken to coat both sides. Cover dish with foil. Bake 25 to 30 munutes, until chicken cooked through. Cooking at the Lake – Baked Chicken with James Schoenster
Ingredients:
All ingredients are approximate. Adjust to taste.
3 Chicken Breasts
2 Tablespoons Sour Cream
1/2 Cup Panko Bread Crumbs
2 Tablespoons Italian seasonings
2 Tablespoons Butter/margarine
2 Tablespoons EVOO
1 bunch or bag of broccoli (If desired)
Directions:
1. Preheat oven to 425
2. Pat the chicken dry and season with salt, pepper and Tony’s seasoning
3. Spread a thin layer of sour cream on top.
Making the breading:
1. Preheat oven to 425°
2. Mix 4 tbsp of melted butter and some olive oil with Italian seasonings (or salt & pepper, or Tonys spice)
3. Add ½ cup of panko and mix it all together
4. Make Panko “wet with oil” but not too much!
5. Add breading on top of sour cream
6. Bake at 425° for about 20-30 minutes or until chicken is done.
For broccoli:
1. Coat broccoli with EVOO and Tony’s seasoning in a baggie.
2. Place on baking sheet along with the chicken.
