Ingredients

beans (1 1/2 lbs) (pea, navy)

onion, chopped
1/2
cup
ketchup
1/4
cup
brown sugar (1/2 cup if you like it very sweet)
1
cup
water
2
tablespoon
dry mustard
2
tablespoon
molasses
1
tablespoon
salt
1/2
teaspoon
ginger, or 1 inch fresh, minced
1/2
cup
tomato juice (if made in oven)
Directions:
Wash and sort beans. Cover with water and bring to a boil. Boil 2 minutes and remove from heat. Let soak 2 hours. Bring to a boil again and then simmer about an hour, or until cooked but not soft or mushy.
Drain beans. Put in the crockpot. Mix the rest of the ingredients together and stir into the beans. Turn on low and cook 10 - 12 hours.
OR
Add 1/2 cup tomato juice. Cover tightly and cook in 200 oven overnight.

Materials
8 oz Bacon
1 medium sized Yellow Onion finely chopped
1 lbs Smoked Sausage cut into rounds
4 cloves Garlic minced
1 Tsp Olive Oil
1 can Baked Beans
½ cup Ketchup
2 Tbsp Barbeque Sauce
1 cup Maple
1 Tsp Worchestershire Sauce
3 tbsp Frank's Red Hot Sauce
1 Tsp Salt & Pepper
Instructions
Heat Olive Oil in a Cast Iron Skillet. As the oil shimmers, add the bacon and cook until crispy halfway. Once cooked halfway, remove using a slotted spoon. Add the onion and garlic to the same pan. Do not remove the fat drippings. Coom until the garlic gets fragrant or the onions turn brown-ish.
Transfer the cooked onion and garlic along with all the other ingredients to the slow cooker. Top with the crispy bacon. Toss to combine everything. Cover with the lid and slow cook on high for 2 hours or on Low for 4 hours.
Once it gets cooked, garnish with some more crispy bacon and serve immediately
Notes
Stove top - You can cook this in a dutch oven. Cook the Bacon and then remove them with a slotted spoon. In the same pan, cook the onion and garlic. Once cooked, add all the other ingredients in the pot. Cover cook on medium high heat for 60 minutes, stirrng only twice in between.
Oven - After you've cooked the bacon and then the onion and garlic, transfer them along with all the other ingredients to an oven safe dish. Preheat the oven to 325F and Bake for 45 minutes.
Slow Cooker Baked Beans for a Crowd
This easy side dish feeds a crowd! You want to plan ahead. The beans should soak for 12-24 hours so the day before you want to serve them, put the beans in a pot or bowl and cover with water and 2 Tablespoons of salt. They cook for 9-10 hours so if I am serving them for lunch I often cook them overnight and then move my slow cooker from low to keep warm or serve.

Slow-Cooked Baked Beans
Ingredients:
3/4 lb thick-cut bacon, diced
1 large onion, diced
1 lb dried pinto beans
5 cups water
3/4 cup unsulfured molasses
1/2 cup ketchup
1/4 cup yellow mustard
1 tsp salt
1 tsp black pepper
Preparation:
Cook the bacon over medium heat in a medium-size skillet. When the bacon begins to brown, add the onions and sauté until translucent.
Place the beans into the slow cooker with the water, bacon, and onion. Cover and set the slow cooker on high for 3 hours.
Meanwhile, prepare the sauce. Combine the molasses, ketchup, mustard, salt, and pepper in a small bowl. Set aside.
After 3 hours add the sauce and stir to combine. Cover and let the beans cook an additional hour.
