2 tablespoons canola or vegetable oil
12 ounces smoked chicken sausage, sliced (or Andouille, beef, pork, turkey, or pork and beef smoked sausage)
1 yellow or white onion, diced
1 green bell pepper, diced
2 (28 ounce) cans vegetarian or original baked beans, drain some of the liquid
1 tablespoon Dijon mustard
1 (14. 5 ounce) can diced tomatoes, do not drain the liquid
1/3 cup packed light brown sugar
1/4 cup molasses
1 teaspoon kosher salt
1/2 teaspoon white black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Ellen’s Magic: You may substitute the smoked sausage for cooked ground beef, ground turkey, or ground breakfast sausage.
Preheat Oven to 350 Degrees
Spray a 9x13 inch baking dish with Cooking Spray and set aside.
In a large pot or skillet over medium to medium-high heat, add the oil let it get hot, then add in the sausage and let it brown for 7 minutes. Next add in the diced onion and bell pepper to the sausage and add some kosher salt to sweat and let it cook until translucent for 5 to 6 minutes. Remove the pot from the burner and in the diced tomatoes, seasonings, molasses, brown sugar, Dijon mustard and the baked beans and mix to combine. Pour the beans mixture into the prepared baking dish, cover with aluminum foil and bake for 15 to 20 minutes, then remove the foil and continue to bake for another 15 to 20 minutes. Remove from the oven and let it rest for a few minutes then serve and enjoy!
