How To make Bagels(Breadmaker)
SMALL (8:
2/3 cup Water
1 tablespoon Honey
1 teaspoon Salt
2/3 cup Whole wheat flour
1 1/3 cup Bread flour
1 teaspoon Yeast
MEDIUM (12:
1 cup Water
1 1/2 tablespoon Honey
1 1/2 teaspoon Salt
1 cup Whole wheat flour
2 cup Bread flour
1 1/2 teaspoon Yeast
LARGE (16:
1 1/3 cup Water
2 tablespoon Honey
2 teaspoon Salt
1 1/3 cup Whole wheat flour
2 2/3 cup Bread flour
2 1/2 teaspoon Yeast
Set for dough cycle.Let the machine knead the dough once, and then let the dough rise for only 20 minutes in the machine. Even if your cycle runs longer, simply remove dough after 20 minutes and turn off the machine. Divide the dough into the appropriate number of pieces. Each piece should be rolled into a rope and made into a circle, pressing the ends together. You may find it necessary to wet one end slightly to help seal the ends together.
Place these on a well greased baking sheet, cover and let rise only 15 to 20 minutes. Meanwhile, bring to a slight boil in a "nonaluminum
pan", (Donna German uses a cast iron frying pan) about 2 inches of water. Carefully lower about 3 or 4 bagels at a time into the water, cooking for about 30 seconds on each side. Remove bagels, drain on a towel, sprinkle with poppy seeds, sesame seeds or dried onion bits if desired and place on the greased baking sheet. Bake in a preheated 550 degree oven for 8 minutes.

How to make a Quick and Easy Homemade Bagels without machine. Crusty and chewy you can't get enough of it.
Here's what you'll need:
1 cup warm water (250ml)
3 tbsps sugar (45g)
2 tsp instant yeast (6g)
3 cups all purpose flour (375g)
1 tsp salt (5g)
2 tablespoons honey for boiling water
egg wash: 1 egg plus 2 tbsps milk
some sesame seeds for toppings

How I made blueberry bagels at home? It's surprisingly easy and fun. The fresh homemade blueberry bagels are crispy on the outside and perfectly chewy.
Homemade Blueberry Bagels
(4 servings)
Ingredients:
1/4 cup (60ml) warm water
1 Tbsp (15g) sugar
1 tsp (3g) dry instant yeast
3/4 cup (100g) fresh blueberries
1 2/3 cups (250g) bread flour
1/4 tsp (2g) salt
1500ml water
2 Tbsp (30g) dark brown sugar
(425F/220C) Bake 15 -18 minutes

Instructions:
1. Start with yeast mixture
Prepare ¼ cup (60ml) warm water (the temperature is around 96F/35C)
Add 1 Tablespoon (15g) of sugar
Add 1 teaspoon (3g) of yeast
And then mix together
Set it aside and rest around 5 minutes
2. Add ¾ cup (100g) fresh blueberries in a bowl
Use a fork to mash the blueberries
3. Prepare a big bowl
Add 1 2/3 (250g) of bread flour
¼ teaspoon (2g) of salt
Mix them together
4. Add yeast mixture into the flour
Add mashed blueberries
Use a spatula to mix together
Then use hands to mix and knead in the bowl
Until it roughly becomes a dough ball
Cover the dough and rest 10 minutes
5. After 10 minute, transfer the dough to a work surface
Knead the dough around 10 minutes
Until the dough is smooth
(Since I’m using bread flour here, it takes more effort and time)
Put the dough back into the big bowl
Cover the dough, and let it proof for around 60 minutes
6. After 60 minutes, the dough has doubled in size.
It’s ready for shaping
Turn it out of the bowl
Divide it into four pieces
Start with one piece at a time
Roll it into a smooth and round ball
Use same method to finish all of them
7. Shape the dough to bagel looking
First Use the index finger to poke a hole through the center of the dough ball
Slowly stretch the hole
Then twirl the dough on the finger to make the hole bigger
Until it’s about 11/2” in diameter
8. After shape all of bagels
Cover them and let them rest for around 20 minutes
9.Preheat the oven to 425F/220C
Prepare a big pot of water around 1500ml
Add 2 tablespoon (30g) of brown sugar
Bring it to boil
10. After 20 minutes, bagels are ready to go into the water
Gently put the bagel into water, one by one
Two at a time
Cook the bagels for 30 seconds
Then Flip them over and cook another 30 seconds
Remove the bagels from the water and place them on the baking sheet
Repeat with another two bagels
11. Transfer the bagels to the preheated oven
Bake for 15-18 minutes
Or until they’re brown looking
Cool them completely on a rack

Resepi roti yang berasal dari Vienna, Austria ini memang unik dan lain dari roti biasa dari segi rasa dan tekstur. Roti bagels yang biasanya dijadikan sebagai roti sandwich atau boleh juga disapu dengan krim keju dan jem pilihan mempunyai tekstur luaran yang agak kenyal dan rangup, terutama ketika masih panas, manakala tesktur di dalamnya sedikit mampat dan lembut. Resepi bagels yang asli tiada tambahan minyak sayuran ataupun mentega, tetapi saya lebih suka bagels yang ditambah sedikit minyak agar tidak terlalu liat setelah sejuk.

BAHAN-BAHAN:
215 ml air sejuk | 3/4 cawan & 2 sudu besar & 1 sudu teh (pakai air suam jika uli pakai tangan)
24 gram gula halus | 2 sudu besar
4 gram yis kering segera | 1 & 1/2 sudu teh
15 ml minyak sayuran | 1 sudu besar
250 gram tepung roti | 2 cawan
125 gram tepung gandum | 1 cawan
6 gram garam | 1 sudu teh
AIR REBUSAN:
1500 ml air | 6 cawan
26 gram gula merah/madu/gula perang | 2 sudu besar
HIASAN:
Putih telur/air
Bijan hitam
Bijan putih
SUHU MEMBAKAR : 200℃ | 395℉ selama 20 ke 25 minit, atau sehingga keemasan. Bakar menggunakan api atas bawah, rak tengah. Panaskan dahulu ketuhar selama 10 ke 15 minit.

Bagels, a popular breakfast bread in Western countries is originated from Vienna, Austria has it's own uniqueness in terms of flavor and texture. Bagels has crispy and slightly chewy crust, especially when it is warm while the inside is compact and soft. The authentic bagels is made without the addition of fat such as vegetable oil and butter. But I like softer bagels texture, that's why I added some vegetable oil in my bagel's recipe.

24 grams fine sugar | 2 tbsp

125 grams all purpose flour | 1 cup
6 grams salt | 1 tsp
BOILED WATER MIXTURE:
1500 ml water | 6 cups
26 grams raw molasses sugar/brown sugar/honey | 2 tbsp
TOPPING:
Egg white/water
White sesame
Black sesame
BAKING TEMPERATURE : 200℃ | 395℉ for 20 to 25 minutes, or till golden brown. Bake at center rack, with top & bottom heat mode. Oven is preheated for 10 to 15 minutes.
