Barbados Christmas Black Cake | Bajan Style!
This Barbados Christmas fruit cake is a desert that contains lots of rum and wine. Dried fruits are soaked in rum, wine, and falernum for up to a year, then this aromatic flavor is added to your cake mixture and baked for 90 mins, after it comes out of the oven more wine and rum is thrown over the cake. Just remember do not drive after you've eaten this cake it's very indulgent.
You will need for one pound of cake
1 lb sugar
1 lb unsalted butter
1 lb flour
1 tbsp baking powder
1 tsp cinnamon
1tsp nutmeg
1 tsp allspice
1/2 tsp salt
4 cups of soaked mix fruits
4 to 6 tbsp browning
8 eggs
1 lime skin
1 tsp vanilla essence
1 tsp almond essence
Blend sugar and butter together until light and fluffy.
Beat together 8 eggs, vanilla, almond essence and peeled lime skin.
Add egg mixture to beaten butter and sugar and continue mixing for another min.
In a separate bowl add dry ingredients together, flour, baking powder, cinnamon, nutmeg, allspice and salt, mix dry ingredients together well.
Add two cups of soaked fruit mix to sugar mixture and mix well with wooden spoon
Add 4 tbsp browning and continue to mix
Slowly add flour, remaining mix fruits and browning.
Add browning until you've reach your desire color.
Grease two baking pans and bake at 350 for 90 mins or untill inserted stick comes out clean.
While still warm add a mixture of rum and wine all over cake and leave to come to a complete cool.
Serve and enjoy.

Real Guyanese Black cake/Rum cake/Christmas cake
You will need the following:
1 pound of butter (margarine can work too)
1 pound of brown sugar
1 pound of flour
12 eggs
11/2 tsp baking powder
1 tsp all spice powder
1 tsp grated nutmeg
1 tsp mixed essence (any essence can work)
1 1/2 -2 tsp gravy browning or Carmel browning
Fruity wine or rum
3 lbs of blended fruits
In a large bowl
Add butter and sugar and mix together
Break the eggs in a bowl and add the zest of 1 orange
Mix eggs and orange zest for a little
Add little at a time to the butter and sugar to help break up the sugar crystals faster
Add flour and baking powder and gently fold it in
Add nutmeg
Add all spice
Gently mix spices in
Add mixed essence
Add gravy browning and Carmel browning
Mix everything in gently
Grease 3 baking dishes with butter and flour before adding the batter to the pan
In a 350 degree oven bake the two small cakes for 45-50 minutes or until toothpick comes out clean
Bake the large cake for 1 hour and 15 minutes or until a toothpick comes out clean
Remove cakes from baking dish 10-12 minutes after finish
Add wine or rum to the cakes while still hot
You can add wine as many times as desired
Cut cake when completely cold

RECIPE
PREHEAT OVEN AT 275º
BAKE FOR APPROXIMATELY 2 1/2 - 3 HOURS
TO MAKE THE CAKE YOU WILL NEED:-

Christmas Fruit Cake, Black Cake, Rum Cake, Super Moist & Delicious!
This recipe of Christmas Fruit Cake is one of the simplest and by far the best I have tried.
This super moist and delicious cake is dense and pack with soaked flavorful fruits .
I promise you can’t go wrong with this simple step by step recipe

Stewed Fruits Recipe
**Ingredients for blended fruits**
1 lb prunes, seeded and chopped
1 lb raisins
1 lb currants
1/2 Ib cherries chopped
Any other fruits of your choice
1 bottle of rum
1 bottle of cherry brandy or wine
(Spices)
**Ingredients for cake **
2 cups or 1 lb butter
2 cups or 1 lb sugar
9 large eggs
2 tsp grated lime or lemon peel
2 tsp vanilla extract or 1 tbsp vanilla essence
1 1b or 4 cups flour (baking or all purpose) (sifted)
4 tsp baking powder
1 tsp salt
1-2 tsp mix spice
2 tsp ground cinnamon
2 tsp nutmeg
1/4 cup browning or more for darker color
4-5 cups of soaked blended fruits
The day before or some days before baking, boil the fruits (prunes, raisins, currants, cherries) Link is provided
Line cake pans with 1 layer of wax
paper.
Cream butter and sugar until light and fluffy.
Break eggs into a bowl, add lime peel then pour into the batter gradually.
Add fruits to blender and lightly blend, then add to batter.
Add enough browning to give desired colour, along with vanilla essence or extract
Combine flour, baking powder, cinnamon, salt, nutmeg, fold into creamed mixture gradually.
Add more rum to your desired taste.
Pour batter into lined baking pans and bake in a preheated oven at 220 degree celsius for first 45 minutes.
Reduce heat to 200 degree for the remaining 45 minutes, or until tester comes out clean.
(Place water pan at the bottom of the oven)
Prick hot cakes and soak with a mixture of
rum and cherry brandy. (Any Alcohol You Desire)
Cover and set aside to cool.
Soak overtime for a few days to keep moist.

1 3/4 cups all purpose flour
5 eggs
2 sticks /1 cup butter
4 cups fruits
2 tsp baking powder
1 1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove
1 tbsp vanilla extract
1 tbsp almond extract
1 tbsp lemon zest
2 tbsp molasses
2 1/2 tbsp browning
if your batter is too stiff add alittle wine to losen it up a bit.
