Black Cake Recipe Caribbean
This is the most famous cake in the Caribbean especially the Island Trinidad and Tobago, the birthplace of DJ Bravo (Dwayne Bravo) Barbados and Jamaica. Many people use it for their wedding cake and it is a must-have for Christmas. It is right up there with the ham and turkey. This cake is a CHAMPION! Everyone loves a good piece of black cake. After working on this recipe for years, I believe that this is a fantastic recipe. It is moist but not wet, and this makes it perfect for icing. Try this recipe, and you will love this cake as much as we do.
Tip 1: Although this cake recipe has a fair amount of alcohol, the alcohol evaporates during the cooking process leaving behind just the fantastic flavour. If sharing with children or pregnant women, avoid pouring alcohol over the top of the cake when done.
Tip 2. This cake can last several months, up to a year as the alcohol helps to preserve.

How To Make Christmas Black Cake
A great tutorial on how to make a traditional Christmas cake. This cake is made every year in Barbados. Learn how to make this Christmas black cake, with step by step instructions.
For a one pound Cake you will need
1 lb. sugar
1 lb. unsalted butter
1 lb. flour
1 tbsp. baking powder
1 tsp cinnamon
1tsp nutmeg
1 tsp allspice
1/2 tsp salt
4 cups of soaked mix fruits
4 to 6 tbsp. browning
8 eggs
1 lime skin
1 tsp vanilla essence
1 tsp almond essence
Blend sugar and butter together until light and fluffy.
Beat together 8 eggs, vanilla, almond essence and peeled lime skin.
Add egg mixture to beaten butter and sugar and continue mixing for another min.
In a separate bowl add dry ingredients together, flour, baking powder, cinnamon, nutmeg, allspice and salt, mix dry ingredients together well.
Add two cups of soaked fruit mix to sugar mixture and mix well.
Add 4 tbsp. browning and continue to mix
Slowly add flour, remaining mix fruits and browning.
Add browning until you've reach your desire color.
Grease two baking pans and bake at 275 for 90 mins or until inserted stick comes out clean.
While still warm add a mixture of rum and wine all over cake and leave to come to a complete cool.
Serve and enjoy.

If you have run out of time before Christmas or New Years then soak fruit at least a week before or consider stewing the fruits instead.
The longer they soak the better!
Black cake is not only great for Christmas but also for birthdays, anniversaries or weddings! One of my sons & mum are both born in December & love Black cake.
You will need a large bottle of Red wine AND White Rum or Spiced dark rum like Myer's rum, Bacardi rum, Wray & Nephew or any Caribbean rum.
Fruit: One pound of prunes, raisins, currants, mixed peel & half to one pound of maraschino cherries.
A large air tight jar.
After the fruit have soaked sufficiently we will coarsely blend it and add it to the cake batter.
TIP: I placed the cherries in the jar First so that once I pour out the fruit they come out LAST and I can save some of the cherries for the batter & not grind them all or use some of them cut in half as decoration on top of the cake before it fully bakes.

Ingredients and Measurements:
To soak the fruits: (this amount of fruits is for (2) 10 in. cakes)
1 lb. raisins
1 lb currants
1 lb dried prunes
1 lb maraschino cherries/glace cherries
1/3 cup mixed peel (OPTIONAL)
(1) 750 mL bottle red wine
1/2 cup rum of your choice
(This video shows the process-
To make the browning: (you can use this or store bought)
1 cup brown sugar
1 cup stout
To put the cake together:
7 oz. all purpose flour
1/2 tbsp. baking powder
1/4 tsp. salt
1/8 tsp. black pepper (OPTIONAL)
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
2 sticks unsalted butter softened (1 cup/ 8 oz.)
8 oz. brown sugar
6 eggs beaten
1/2 tbsp. mixed essence (or vanilla if you wish)
2 lb soaked and ground fruits (half of the fruit mixture measurement above) 1/4 cup browning (homemade or store bought)- you may need more or less depending on the darkness you prefer and the type of browning you use
extra butter and flour for greasing the pan
To soak the cake:
1/4 cup E&J Brandy
1/4 cup Taylor's Cream Sherry

Real Guyanese Black cake/Rum cake/Christmas cake
You will need the following:
1 pound of butter (margarine can work too)
1 pound of brown sugar
1 pound of flour
12 eggs
11/2 tsp baking powder
1 tsp all spice powder
1 tsp grated nutmeg
1 tsp mixed essence (any essence can work)
1 1/2 -2 tsp gravy browning or Carmel browning
Fruity wine or rum
3 lbs of blended fruits
In a large bowl
Add butter and sugar and mix together
Break the eggs in a bowl and add the zest of 1 orange
Mix eggs and orange zest for a little
Add little at a time to the butter and sugar to help break up the sugar crystals faster
Add flour and baking powder and gently fold it in
Add nutmeg
Add all spice
Gently mix spices in
Add mixed essence
Add gravy browning and Carmel browning
Mix everything in gently
Grease 3 baking dishes with butter and flour before adding the batter to the pan
In a 350 degree oven bake the two small cakes for 45-50 minutes or until toothpick comes out clean
Bake the large cake for 1 hour and 15 minutes or until a toothpick comes out clean
Remove cakes from baking dish 10-12 minutes after finish
Add wine or rum to the cakes while still hot
You can add wine as many times as desired
Cut cake when completely cold
