Barley bread is recommended by experts for its nutritional values and its benefits on human health. Barley is rich in soluble fiber, the consumption of which can contribute to a normalization of blood levels of cholesterol, glucose, and insulin. The consumption of barley flour was associated with a greater feeling of satiety an hour and a half after the meal, compared to an equivalent amount of white bread.
Bread made with barley meal, called Khoubz Ch3ïr or Khoubz Zra3, is very well known bread in Algeria and Morocco. In addition to being very delicious, it's great for your health. You can serve it with a chourba, harira , your favorite tadjine or stew.
You can also enjoy it at breakfast or taste with honey or olive oil, It's excellent!

250g - 1 cup whole wheat flour (called farine de ghemkh)
3 TBS oil
1 1/2 tsp salt
1 TBS yeast
about 1 1/2 - 2 cups warm water

500g - 2 tasses de farine d'orge (farine de ch3aïr)
250g - 1 tasse de farine de blé entier (farine de ghemkh)
3 CS huile
1 1/2 cc de sel
1 CS levure
environ 1 1/2 - 2 tasses d'eau chaude

500 g - 2 csésze árpa liszt (farine de ch3aïr)
250 g - 1 csésze teljes búzaliszt (farine de ghemkh)
3 EK olaj
1 1/2 tk só
1 EK élesztő
körülbelül 1 1/2 - 2 csésze meleg viz
