How To make Aunt Hilda's Health Muffins
2 1/4 c AM Wheat Bran
2 c Milk or soy milk
2 Eggs or egg replacer
1/4 c AM Unrefined Vegetable Oil
1/2 c Honey (or less to taste)
2 1/2 c AM Multi Blend Flour
2 1/2 tb Non-alum baking powder
1 ts Sea salt (optional)
1 ts Cinnamon
1 1/2 c Raisins
3/4 c Chopped walnuts or pecans
-- (optional) In a large mixing bowl combine the bran, milk, eggs, oil and honey. In a second bowl, combine all the remaining ingredients. Add the dry mixture to the liquid and mix thoroughly. Fill oiled muffin tins. Bake in 350 F. oven for 30 minutes, or until tops are lightly browned. Cool on a rack. When thoroughly cooled, store covered in refrigerator or freezer. Makes 24 large muffins.
Oat Bran Variation: To make Aunt Hilda's bran muffins, follow recipe above with these simple changes: a) Substitute 2-1/2 cups of oat bran for the wheat bran. b) Increase the honey to 3/4 cup. Making Pumpkin Pie with Lauren & Jessica
Pumpkin Pie Time!
Learn how to make pumpkin pie with Jessica and Lauren using a family recipe! Just in time for Thanksgiving, your family and friends will surely love it! (See Ingredients list below)
Pumpkin Pie Recipe (Makes 2):
- 2 cups mashed pumpkin (canned or freshly cooked, well-drained)
- 2 cups of any milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ginger (optional, this will make your pumpkin a little spicy tasting)
- 3/4 cup packed brown sugar
- 1 level tablespoon cornstarch (Mix into 1 ounce of water before adding to pumpkin mixture, this will thicken the pie)
Mix all ingredients well and bake in an unbaked pie crust.
Bake at 350 degrees Fahrenheit for 30 minutes.
Poke centre with toothpick to check if ready, if toothpick comes out wet then cook longer, if dry the pie is ready!
The centre must be firm and every oven heats differently so this is why you have to check the pie.
Serve with a dollop of whip cream, cool whip, or vanilla ice cream.
Enjoy with family and friends.
