Super colourful, fresh and vibrant rice paper rolls. The recipe for these rainbow spring rolls isn't so much a recipe as it is a piecing together of lots of different ingredients. I'm showing you how to make the bright yellow egg strips, crispy tofu and pickled cabbage but you can fill your rolls with whatever you like.

SPRING ROLLS

¼ cup lime or calamansi juice
¼ cup fish sauce
¼ cup water
½ cup cilantro leaves, finely chopped
4-6 pcs. red chilies
2-3 tbsps. sugar
2 tsps. minced garlic
PEANUT SAUCE
½ cup peanut butter
½ cup hoisin
2 tbsps. water
2 tbsps. oyster sauce

There’s no need to measure any of the ingredients - just add a little bit at a time & taste test as you go. I kept this recipe basic, but if you’d like to experiment then try adding soy sauce, chili oil, sesame oil or rice vinegar.
The key to rice paper that’s not oily is to wait until the oil is hot enough for frying. I like to test it with a wooden chopstick, or dropping in a small piece of rice paper. The rice paper should crisp up after just a few seconds. Also make sure not to add the filling on top until you’re ready to serve so you don’t end up with soggy chips.
