How To make Artichoke Rice Salad
3 c Hot cooked rice
12 oz Marinated artichoke hearts
drained, and :
coarsely chopped, -- reserving liquid 4 oz Sliced fresh mushrooms
1/2 c Sliced green onions
1/2 c Chopped red or yellow pepper
1/4 c Grated Parmesan cheese
1/8 ts Ground white pepper
1 1/2 tb White wine vinegar
Lettuce leaves Combine hot rice, artichoke hearts, mushrooms, onions, cheese, and pepper. Combine reserved liquid from artichokes and vinegar; shake to combine. Drizzle over salad. 1 cup baby spinach
3 Tbs minced parsley
1/4 cup thinly-sliced green onion

1/4 cup minced yellow pepper

DIRECTIONS

Make Ahead Artichoke Rice Salad
1 package any flavor ramen noodles, crumbled, 1 can black olives, drained and chopped, 2 tablespoons minced green onions, 1 jar of artichoke hearts diced, 1 can diced water chestnuts, drained, and chopped, 1 cup mayonnaise, 1 box chicken flavored Rice-a-Roni prepared as directed on the box. Chill the rice thoroughly before mixing all together. In 24 hours the ramen will be softened.
Enjoy!
Serves 5-6 Salad portions!
