How To make Aromatic Lamb
1 Leg of lamb (about 4 lbs)
3 lb Potatoes (about 5 oz each)
1 Lemon (may be doubled)
Honey Olive oil Butter Rosemary, thyme & oregano Put the leg of lamb into a large roasting pan. Bruise the leaves of 2 or 3 sprigs of rosemary and sprinkle them over the meat. Add
plenty of pepper and 1 tablespoon honey. Rub the mixture into the meat with your hands. Then rub half a lemon over the joint, squeezing the juice on to the meat as you do so. Do not add any salt. Leave to marinate for 4 to 24 hours. Peel and quarter the potatoes, then arrange them in a single layer round the lamb. Squeeze lemon juice over the potatoes -- use at least half a lemon, or up to one and a half lemons for a strong citrus flavour. Carefully pour 1/4 pint water into a corner of the roasting pan, then sprinkle over the potatoes and lamb about 2 tablespoons chopped fresh rosemary, at least 1 teaspoon each fresh chopped thyme and oregano, and some salt and pepper. Drizzle on 1-1/2 teaspoons honey and 1 tablespoon olive oil, then dot with 1 oz
butter. Bake at 425 F (220 C) gas mark 6 for a further 1 to 1-1/4 hours. The ingredients will become gilded and will burnish to a rich brown in places. Lift the meat and turn the potatoes occasionally, and if necessary, add a little boiling water to the pan to prevent drying out.

2 Small piece cinnamon stick
600- 1200g Lamb pieces
3 and 1/2 tsp Kashmiri Chilli Powder* mild
2 tsp Turmeric Powder
2 tsp Salt
1 tsp Chilli Powder * spicy
3-5 tbsp of Cooking oil
1 and 1/2 tbsp Ginger *thin cut
1 Green Chilli
2 and 1/2 Onion medium size
1 Nutmeg
3 tsp Garlic paste
5 Pepper
1 tsp of tomato puree **(optionaly use 1
tomato chopped fine.)
2 tbsp Natural Yogurt ( If like to make mild
spicy curry use 3-4 tbsp yogurt instead of
2 tbsp.
3 tbsp of Coriander leaves

The Garlic and herb are very tasty and brings out the flavours in the lamb For the best results make sure you leave the dough for at least 1 hour (minimum). Ingredients
1 kg lean lamb pieces
4 tbsp (56g) Sunfoil Sunflower oil
4 tbsp (56g) chilli powder
1 tbsp dhania and jeera powder, mixed
1 tsp (4g) turmeric powder
1 tbsp (14g) crushed ginger and garlic
1 onion, chopped
2 tomatoes, chopped
3 soft cooking potatoes
1 sprig of curry leaves
Fresh coriander for garnish
Salt to taste
Directions
Heat oil, then add onion and tomato and allow to braise.
Add curry leaves, all spices, and the ginger and garlic mix. Allow the spices to infuse, letting the aroma fill your kitchen.
Add the lamb pieces to the mixture, allowing the spices to infuse for 5 minutes.
Add 500ml water, close the lid and allow to simmer for 15 minutes.
Add salt to taste.
Add potatoes and then cover, allowing your curry simmer for a further 20 minutes.
Your curry is ready once the gravy has been thickened by the potatoes, and the lamb is tender.
Switch off the stove, add chopped coriander and serve.
Serving Suggestions: Best served with rice or roti. Loshini also recommends fresh bread made into a bunny. Enjoy with an assortment of pickles and salads.

I have chosen to use food as a metaphor as it unites womans interior body (digestive system) with her exterior image (fat/thin), and is vital to the maintaining of a socially acceptable proper identity.
