This is a really quick dessert and you can make it in 5 minutes plus baking in the oven. The rose water and poppy seeds give a wonderful dimension to the whole dessert.
Ingredients:
5 apricots (2 in the mixture, 3 for the top)
Wheat flour 125 g,
Brown sugar 100 g,
Rose water 1 tablespoon,
Milk 3 spoons,
Sunflower oil 3 tablespoons,
Baking powder 2 teaspoons,
Poppy seeds 1 teaspoon,
A pinch of salt
Muffin molds 5.5 cm.
Bake in a preheated oven for 20 minutes at 180 degrees C

Grumpy cooks Maggie Beer's Apricot Jam, Oat & Yoghurt Muffins
I may have mentioned earlier that I received several Maggie Beer products as a gift (I’ve also purchased some too), and when I was thinking about what to cook I saw the jar of jam and went in search of a recipe.
This recipe had everything I had in my pantry and fridge, so here it is. A great recipe for morning or afternoon tea and something that can be made in batches, frozen and popped in lunch boxes.
Ingredients:
½ cup rolled oats
60g butter
¼ cup caster sugar
2 eggs
½ cup milk
1 cup Greek yoghurt
2 cups self-rising flour
¼ tsp baking soda/bicarb soda
3 tbsp apricot jam
Method:
1. Preheat the oven to 180°.
2. Spread the oats on to a tray and pop in the oven for 3 minutes. Remove and cool.
3. Grease a muffin pan or use patty cases.
4. With an electric beater cream the butter and sugar until pale.
5. Beat in eggs, one at a time.
6. Stir in milk and yoghurt.
7. Sift in baking soda/bicarb soda and flour, stirring gently until just combined. Add the oats and combine.
8. Spoon the mixture evenly amongst the muffin cases. Distribute evenly and use a knife to swirl jam into the mixture.
9. Cook 18-20 minutes.
10. Cool in the tray for a few minutes and the transfer to a wire rack.

Pumped Apricot Muffins (Oil Free and Vegan)
I found my Hamilton Beach silicon muffin pans at the Kitchen Store. There a other brands on Amazon:
INGREDIENTS LIST:
4 tablespoons ground flaxseed + 3/4 cup water, whisked, set aside to thicken
1 (14.5 ounce) canned pumpkin
1 cup mashed bananas
1 cup chopped apricots
1/2 cup chopped pecans
3 1/4 cup whole wheat pastry flour
1 1/2 cup evaporated cane juice sugar
2 teaspoon baking powder
2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Preheat oven to 350ºF degrees. Bake 30 minutes inlarge muffin pan.

Polish Poppy Seed Rolls - Food Wishes
Traditionally, a Polish Poppy Seed Roll is rolled, baked in a loaf, glazed, and then sliced, but here we’re using those same ingredients to create individual rolls, which ended up being as unusual, as they were deliciously addictive. Speaking of which, do not make these before a drug test. You’ve been warned. Enjoy!
