Dried Fruit Biscotti Recipe
Dried Fruit Biscotti are absolutely wonderful for morning hot tea or coffee. These are made with dried cranberries, plums, apricots and raisins that bring an amazing taste.

Ingredients
Makes about 25 biscotti
1 stick (110g) butter, room temperature
1/2 cup (100g) sugar
2 eggs
1 1/2 tsp (6g) baking powder
Finely grated zest of 1 lemon
1 tsp (5g) vanilla extract
1 cup mix of dried fruits (cranberries, plums, apricots and raisins)
1 1/4 cup (160g) all-purpose flour
1/2 cup (50g) nuts, optional
1. Preheat oven to 180°C (350°F).Line a baking sheet with parchment paper.
2. In a medium bowl beat butter and sugar until creamy, then add eggs, lemon zest and vanilla extract. Stir well.
3. Add baking powder and flour and mix until well blended. Stir in dried fruits.
4. Pour the dough into one long loaf or 2 smaller loafs into the prepared baking tray. The dough is pretty sticky so you can wet your spatula or use flour to be able to give the right shape.
5. Bake for about 25 minutes, remove from the oven and let cool for about 30 minutes. Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 15-17 minutes until golden brown.

How to make Apricot and Almond Nougat
Sweet, chewy, nutty and crunchy, it doesn't get much better than this as far as sweets are concerned. This French-style nougat is the very definition of a treat and couldn't be easier to make! Very few ingredients required, and very little effort - the one care point is that you should be careful not to under, or over, boil the sugar. Too little or too much heat and you could very well end up with a puddle of sugar, or worse - a rock hard, inedible sticky block. For this, sugar thermometers are a must!

These classic Italian almond cookies are very easy to make, and so so deliciouse. I have upgraded my recipe to even higher standards by making it more yummier by adding apricots, pistachios, shredded coconuts, extra Almond extract to give the more intense almond flavor, making it a devine cookie recipe :) It is perfectly sweetened with honey, soft and chewy on the inside and slightly crispy on the outside. What more could you want in a cookie right ?

INGREDIENTS ...
1 1/2 cup Blanched Almond Flour
1/4 cUP Organic Coconut Flour
1/4 cup Slivered Pistachio
10 to 11or ( 1/3 cup - heaping - dry Apricots - choped finely)
1/4 c Pure Honey / warmed up
1/4 cup Organic Coconut Oil / warmed up
1 large Egg / beaten well
1/2 tsp. Pure Almond Extract
1/2 tsp. Pure Vanilla Extract
2 Tbsp. Granulated Sugar
2 Tbsp. Shredded Coconut
1/4 tsp. Pink Salt / or regular table salt
1/4 tsp. Baking Soda
Little Powdered Sugar / for sprinkling the tops if you like
BAKING ... Pre - Heat the oven on 350*F for 10 minutes before baking - then REDUCE heat to 325*F to Bake.
Heat and timing of baking depends on the individuals oven heat.
Bake between 10 to 12 minutes, until the tops and bottoms are golden color. (DO NOT OVER BAKE)
