Waffles (AIP | Grain Free | Gluten Free | Vegan)
If you are looking for an easy AIP Elimination Phase compliant Waffle this video is for you. One of the ways I made AIP easy for me was by renovating recipes I already loved. While I am not a sweets for breakfast kind of girl, we do love breakfast for dinner. Pancakes, french toast or waffles with bacon or ham are all regulars on the table. It took me a while but I finally have an AIP Waffle recipe that I can enjoy alongside them. These are great with berries, coconut whipped cream, tigernut butter or my favorite - classic real Canadian Maple Syrup. I hope you like this as much as we do.

AIP Waffles
2/3 Cup Coconut Flour
1 Cup Cassava
1 TBS Baking Powder
1/2 tsp Salt
1 TBS Coconut Sugar*
1/2 Cup Applesauce
1/2 Cup Shortening, Melted
1 1/4 Cup Coconut Milk
1 TBS ACV
1) Mix Coconut Milk and ACV together set aside.
2) Mix dry Ingredients together.
3) Add Applesauce, shortening and milk to the dry ingredients.
4) Spread batter in Waffle maker and cook until steam stops (usually takes a little longer than the normal waffle iron setting.
These are best if they cool a bit before eating.
*Coconut sugar is optional. It will make a sweeter waffle but can be left out completely.
Chunky Applesauce Muffins!! Hello Autumn! Noreen's Kitchen
Greetings! After having so many requests for an applesauce muffin, I am finally doing one! Here is a recipe that uses the bulk muffin mix for a start on these great muffins. I added some eggs, milk, applesauce and cinnamon along with a chopped apple and these turned out amazing!
I baked them for 15 minutes, allowed them to cool in the pan for 5 minutes and then removed them to enjoy for breakfast. I spread them with some homemade cinnamon butter and they were fantastic!
let me know if you would like to see a video of the cinnamon butter and I will do one for you soon. It really is wonderful on these muffins or toast or English muffins or bagels! Molly was the inspiration for the spread because she had a store bought version at a friends house and when I looked at the ingredients, I knew I could do better. So I did. So let me know!
I hope you give these muffins a try! They are full of great fiber and nutrition and they will be nice as a lunchbox treat for your kids as well as yourself!

Roasted Apple Sauce is essential if you are roasting a Ham for your Perfect Thanksgiving. Chef Anna Olson's recipe is the best there is, so follow along with the recipe below and you will be in apple sauce heaven in no time!

Ingredients
2 lb (900 g) apples, peeled and sliced
2 Tbsp (30 mL) lemon juice
2 Tbsp (37 g) honey
2 Tbsp (30 g) butter, melted
Pinch of salt
Directions
1. Preheat the oven to 375°F (190°C).
2. Toss the sliced apples with the lemon juice, honey, melted butter and salt to coat well. Spread in a large ungreased casserole or other ceramic baking dish (the apples can overlap) and roast, uncovered and stirring occasionally, until the apples are fork-tender, about 40 minutes. Allow the apples to cool to room temperature.
3. Purée the cooled apples in a food processor or blender. If the apple- sauce is too thick (this will depend on the apple variety), add 1/4 to1/2 cup (60 to 125 mL) of water as you blend. Chill the applesauce until ready to serve

Mama’s Saturday Waffles (Vol. 3 Cookbook Recipe)
1/2 STICK BUTTER (MELTED)
3 EGGS, SEPARATED
2 CUPS SIFTED ALL-PURPOSE FLOUR
2 TEASPOONS BAKING POWDER
1 TEASPOON BAKING SODA
1/2 TEASPOON SALT
1 TEASPOON VANILLA EXTRACT
2 CUPS BUTTERMILK
2 TABLESPOONS SUGAR
Melt butter in a batter bowl. Add buttermilk, egg
yolks, and vanilla. Mix well with whisk.
In a separate bowl, beat egg whites until stiff. Turn on
waffle iron so it is preheated.
Sift flour, salt, baking powder, baking soda, and add to
the batter bowl and mix well. Pour batter into a larger
bowl, then add egg whites and fold into batter.
Place ½ cup batter in waffle iron and bake to the color
of your liking. (I like to make mine dark!) You can also
make a bunch, then put them on a wire rack (to
prevent them from getting soggy), and then place them
in the iron again for extra crispy waffles!
