How To make Applejack Pie
Pastry 8 c Flour
4 ts Salt
2 2/3 c Shortening
1 c Water
Filling 25 Apples, tart, peeled; sliced
3 c Sugar
1 pn Salt
4 ts Cinnamon
1/2 c Butter; melted
Glaze 1 c 10x sugar
2 tb Light cream
Preheat oven to 400 degrees. Mix flour and salt in large mixing bowl. With pastry blender, cut in shortening until particles are pea-sized. Sprinkle with milk, a little at a time, mixing with fork until all flour is moistened. Gather dough together and press firmly into a ball. Roll out half dough to fit bottom of 12x18 pan, allowing for sides. Mix all filling ingredients together and pour into pastry shell. Roll out remaining dough, cut air vents, and place on tip. Crimp bottom and top crusts together and bake for 50 minutes. If crust is browning too fast and apples aren't cooked, reduce heat to 350 degrees and continue baking until done. Cool about 15 minutes and then glaze. Make glaze by mixing ingredients thoroughly, adding just enough cream to make thin frosting. Drizzle over wark applejack. Anna Weishaar. -----

Bearded and Bored #AppleJack Recipe - 30% to 40% ABV:
1 gallon - Apple Juice - NO PRESERVATIVES
3 cups - Dark Brown Sugar
1 tsp - Yeast Nutrient -
1/2 tsp - Pectic Enzyme -
1 tsp - Distillers Active Dry Yeast (D.A.D.Y.) -
1 can - Frozen Apple Juice Concentrate - thaw on bottling day
Hydrometer -
Bucket Spigot -
StarSan -
Airlocks -

1. Combine all ingredients, airlock and ferment the apple wine for a month or more until fermentation is complete and wine is clear.
2. Siphon apple wine into a clean bucket to combine with the thawed apple juice concentrate, then bottle in plastic bottles.
3. Freeze the bottles for 2 days.
4. Add a clean object (shot glass, measuring cup, etc.) to the bottom of large cups that will catch the runoff apple jack. Open your frozen bottles, tip them into your cups and let them drain at room temp, or in the refrigerator until the ice left over is mostly white.
5. Collect all the drained apple jack and save. Rinse the remaining ice out of your bottles, then refill with apple jack and refreeze.
6. Repeat steps 3 thru 5 until the apple jack no longer freezes, or is not frozen enough to keep the ice in the bottle. Usually 3 to 4 freezes will do it.
7. Bottle your finished apple jack and enjoy in moderation unless you enjoy hangovers:-)

what is Applejack?
Hey guys this month is National Applejack Month! So we thought it would be great to start this month off with a Spirited Talk. In the past, Spirited Talks were a video series where I would ask a brand ambassador in to talk about a product, but we decided to reformulate the series. From now on I'l used spirited talks to talk through the details of particular spirit, giving you details on it's history and geography, how it's distilled, etc. This one is a little off the cuff and I promise they'll get better as we go. Hope you enjoy it! I will definitely do a deeper dive on Applejack as a spirit, but I wanted to get this one out in time for the start of Applejack month.
Also I didn't get to say too much about Arkansas Black other than that it's distilled in near San Francisco. So here's a little info about it. First of all it's named after the Apple variety that makes up the bulk of the product. The recipe pays homage to Arthur Skipper Ford a cider and Applejack maker that he made from his heirloom apples grown on his ranch on Howell Mountain in Napa Valley. Skipper was a manager for the Dole fruit company which gave him access to Heirloom varieties of fruit of which the Arkansas Black varieties were family favorites. Now the makers of this Applejack are relatives of skipper who decided to carry on his tradition. If you'd like to learn more about this brand you can do so here:
