EASY APPLE SAUCE SNACK CAKE
In today's video Jill whips up a tasty and very quick recipe for an apple sauce snack cake. Perfect for an afternoon or morning break time, or in the evening with a cup of your favorite tea.
Apple Sauce Snack Cake

Ingredients:
1/2 cup applesauce
1/2 cup water
¼ cup vegetable oil
2 ½ teaspoon vanilla extract
1 tablespoon white vinegar
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
3/4 teaspoon salt
¾ teaspoon baking powder
¾ teaspoon baking soda
3/4 teaspoon cinnamon
¼ teaspoon nutmeg
½ cup chopped walnuts
How to Make:
Oil an 8” x 8” baking pan and Pre-heat your oven to 350 degrees F. Oven rack should be in the center of the oven
In a large bowl combine the dry ingredients (including the sugar) in a small bowl. Set aside.
In a smaller bowl combine the wet ingredients. Whisk well – the oil and water may not emulsify easily, and that’s ok.
Add the wet ingredients to the dry. Mix until incorporated. Add the chopped walnuts (if using).
Spread into the prepared baking pan. Bake for approximately 20 minutes. The cake took 25 minutes in my oven.
This is a great little cake for two. Extras can be stored in the refrigerator for the next day.

It's Monday, and I am off to visit my daughter, so I'm bringing a snack for my grandsons... so here we go... today it's Apple Crunch Snack Cake!

Emi’s Apple Crunch Snack Cake
Preheat oven to 375 degrees Fahrenheit
In a large bowl, combine:
2 cups flour, (white or whole wheat)
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
Add
1 cup water
4 Tablespoons cooking oil
1 teaspoon vanilla
1 Tablespoon lemon juice or vinegar
Pour into a greased and floured pan,
(I used a 10 inch pie plate.)
Arrange sliced apples into the top.
Sprinkle with cinnamon and brown sugar.
Bake at 375 degrees for
approx. 45 minutes or
until a toothpick inserted
in the center comes out clean.
(Divided into 8 = 300 calories per slice.)

2 1/2 cups all- purpose flour, 1 1/2 cups applesauce, 1 1/4 cups granulated sugar, 1/2 butter softened room temperature, 1/2 cup water
1 1/2 teaspoons baking soda, 3/4 teaspoons baking powder, 1 1/2 teaspoon pumpkin pie spice, 1 teaspoon salt, 2 eggs, 1 cup raisins
2/3 cup chopped walnuts or your choice of nut. Mix butter, sugar, eggs, water, applesauce blend together add flour, baking soda, baking powder, salt, pumpkin pie spice add raisins and nuts last. Bake 350 18-30 minutes for snack cakes or cupcakes, 13x9 or two 8' or 9' pans 40-45 minutes
Maple Nut Icing Recipe used in video: 3 cups powder sugar, 1/3 cup butter, 1 1/4 teaspoon maple extract, 1/2 cup maple syrup combine in bowl. ( Note In the video I should of stated using a cake pan baking time is 40- 45 minutes to bake.)

In this video, I'll be showing you how to make Apple Pie Mug Cake. Looking for a super quick and go-to dessert for one? Try this! It's the perfect substitute for apple pie when you're craving it in an instant.
Makes 1 serving
Cake:
2 tablespoon unsalted butter
1/4 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons brown sugar
1/8 teaspoon cinnamon
2 tablespoons milk
1/4 teaspoon vanilla
Apple Pie Filling:
1/2 cup Gala apples, peeled & chopped (less than 1 small apple)
1/4 teaspoon all-purpose flour
1 tablespoon packed brown sugar
1/8 teaspoon cinnamon
INSTRUCTIONS
Peel and chop the apple into small chunks. Reserve 1/2 cup of chopped apples.
In a large mug (16 oz or more) melt 2 tablespoons of butter in the microwave for 20-25 seconds.
Pour the melted butter into a small bowl and mix in the cake ingredients with a fork. Set aside.
In the used butter mug, stir together the apple pie filling ingredients (chopped apples, flour, brown sugar and cinnamon).
Microwave for 45 seconds and stir. Pour the cake batter on top and smooth it out.
Microwave for 90 seconds or until the cake is cooked through.
