Apple picking and ULTIMATE APPLE PIE recipe (bake-a-long yourself!) / Grow with Bryony
Join me for an apple picking adventure! I pick some apples from the allotment apple tree, and tidy up the windfalls using a rather nifty wheely gadget.
Then we move to my kitchen for a bake-a-long session making my Ultimate Apple Pie with the spoils of my apple picking session. You'll find the recipe below, please give it a go and let me know what you think in the comments!!

MY ULTIMATE APPLE PIE RECIPE
For the pastry:
8 oz / 227g plain flour
4 oz / 114g butter
Pinch of salt
c 5 tbsp ice cold water
Mix the butter, flour and pinch of salt together, ideally in a stand mixer, until you have what looks like breadcrumbs. Add the ice cold water a little at a time to bring the dough together, being careful to work quickly and confidently so as to not overwork the dough. Wrap in clingfilm or a beeswax wrap and chill in the fridge for half an hour.
For my ultimate apple pie filling:
1200g apples (ideally a sharp tasting or cooking variety, such as Bramleys or Granny Smith, but feel free to do what I did and just use what you have growing in your garden or allotment!)
200g sugar
1/2 tsp cinnamon
2 tbsp cornflour
40g butter for the pan
Peel, core and slice your apples into chunks. Measure out the sugar, cinnamon and cornflour into the sliced apples and stir through. Melt the butter in a large saucepan and tip your apple mix in. Cook on a medium heat for 5-10 minutes, until the juices have come out of the apples and thickened slightly into a sauce. This avoids the dreaded 'soggy bottom'!! The goal is to keep the apples as whole as possible and not turn them into pulp, so be careful not to stir too vigorously. Once you have achieved the desired consistency, turn the heat off and allow the apples to cool.
Preheat your oven to 190c (170c fan). Roll out your pastry, being careful to flour all surfaces well to avoid stickage. Trim the edge of the pastry about 1/2 inch away from the edge of your pie dish to avoid shrink back. Fill the dish deeply with your apple mix. To make a lattice top, reroll the pastry cut offs and cut strips about an inch wide. Lattice these as shown in the video. Be sure to egg wash the top of your pie for that beautiful golden crust, then bake in the oven for 40-45 minutes in the preheated oven, until golden. Allow to cool slightly and enjoy your pie!
