Apple Pie From Scratch

Apple Pie From Scratch
INGREDIENTS
Pie Dough
2½ cups flour
1 teaspoon salt
1½ sticks butter, cold and cut in cubes
4-8 tablespoons ice water
Filling
2½ pounds Granny Smith apples, cored and sliced
¾ cup sugar
2 tablespoons flour
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ lemon
1 egg, beaten
1 tablespoon sugar
Vanilla ice cream
PREPARATION
Preheat the oven to 375°F/200°C.
In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
Gradually add in ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and lemon.
Mix until combined and all apples are coated. Refrigerate.
On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch thick.
Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
Pour in apple filling mixture and pat down.
Roll the other half of the dough on top.
Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
Brush the pie with the beaten egg and sprinkle with the sigar.
Cut four slits in the top of the pie to create a vent.
Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
Allow to cool completely before slicing.
Top with ice cream and enjoy!

- 1/2 cup (95g) packed light brown sugary
- 1/2 cup (106g) granulated white sugar
- 2 teaspoons (4g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (4g) fine sea salt
- juice of 1 lemon
- 1 tbsp (9g) corn starch dissolved in 2 tablespoons (21g) water
Pie Crust:
- 2 1/2 cups all-purpose flour (375g), plus extra for rolling
- 3/4 cup unsalted butter, very cold, cut into 1/2 inch cubes
- 1.5 teaspoons (10g) fine salt
- 2 teaspoons (10g) sugar
- 6 to 8 tablespoons (108g) ice water
Baked Version:
- Puff pastry or pie dough...
- apple filling
- egg wash
- 1/2 cup (100g) granulated sugar
- 1.5 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (2g) garam masala
- 1/4 teaspoon ground nutmeg

Earl Grey Pie Recipe - the pie my friends always crave

I have a pinned comment below of the mistakes that I have made while making this pie. I hope you can give it a look if you are deciding to also make this pie so that you can avoid the errors that I made.

Have you ever had an earl grey pie? If you haven't and are a fan of anything earl grey flavored, then you definitely need to give this pie a try. It's the pie that my friends usually request for and is great for anytime but especially spring or summer! It starts with a pie crust that has a small layer of dark chocolate ganache. I then add earl grey pastry cream and then top it off with some whipped cream. Some chopped pistachios are added on top for decoration. This recipe is inspired by the earl grey pie sold at Pie Hole.

As for the pastry cream, I used Tartine's pastry cream recipe as a base.
The ingredients are for making TWO pies.
Ingredients:
Pie Dough
2 1/4 cups flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup unsalted butter
Pastry Cream
10 earl grey standard tea bags
32 oz whole milk (4 cups)
1 tablespoon vanilla paste
1/2 teaspoon salt
60 grams cornstarch (around 7-8 tablespoons)
230 grams sugar
4 large eggs
8 tablespoons unsalted butter
Chocolate Ganache
1 bar of good quality dark chocolate
A few splashes of heavy cream
Whipped Cream
4 cups of whipped cream (I used some of this for the ganache)
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Handful of chopped pistachios
*I realized post production that I overheated the chocolate ????. I would definitely recommend heating it more gently on a simmer as opposed to my making it in a hurry.
