How To make Apple Cranberry Muffins
MUFFINS:
1 3/4 c All purpose flour
1/4 c Sugar
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1 Egg
3/4 c Milk
3/4 c Sweetened applesauce
1/4 c Butter or margarine melted

1/2 tsp Ground cinnamon
In medium bowl, combine 1 3/4 cups of flour, 1/4 cup sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 tb flour, fold into batter. Spoon batter into 12 greased 2 1/2 inch muffin cups. In another small bowl, combine 1/4 cup sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400 oven 20-25 mins or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack. Western New York Apple Growers Assn. ½ cup (100g) sugar
¼ cup (50g) brown sugar
1 teaspoon (3g) baking powder
½ teaspoon ( 3g) baking soda

Ingredients:
- 1 cup All-Purpose Flour
- ½ Tsp Baking Soda
- ½ Tsp Baking Powder
- ½ Tsp Ground Cinnamon
- ¼ Cup Vegetable Oil or Canola Oil
- ½ Tsp Pure Vanilla Extract
- ¼ Cup Brown Sugar
- 2-3 medium-sized Red Apples Peeled, cored and chopped
- 3-4 Tablespoons Maple Syrup
- ½ Tsp Cider Vinegar
- 2 Tablespoon Milk
- 10-12 Pieces Dried Cranberries
Method:
1) First, preheat your oven to 350°F and line a small muffin tin with cupcake liners.
2) Take 2-3 red apples, wash them, and pat them dry. Peel them and cut them in half. Core the center and chop them into small chunks. Keep aside.
3) In a separate medium-sized bowl take flour, baking soda, baking powder, ground cinnamon, and mix well. These are your dry ingredients. In the same bowl add canola oil or vegetable oil along with cider vinegar, vanilla extract, brown sugar, maple syrup, and chopped apples. Mix well. Add some milk and give it a good mix.
Make sure you have a lumpy cupcake like batter. Adding Milk and cider vinegar means you just made buttermilk at home.
4) Use an Icecream Scoop or a spoon to scoop out 2/3rd or 3/4th Portion of batter and pour it in the muffin tin lined with cupcake liners. Sprinkle some cranberries on the muffins and bake them in a preheated oven at 350°F for 18 to 20 minutes or until a toothpick comes out clean.

Applesauce Cranberry Muffins - Cavalcade at Home
We got hit with about 6+ inches of snow on this Michigan morning. My neighbor across the street was the first one out (as usual!) with his snow blower helping to clear the driveways. After the snow was moved and I warmed up inside for a little bit, I wanted to make some muffins for my neighbor as a thank you for his help.
2 eggs
1/3 cup brown sugar (packed)
1/2 cup oil
1 cup applesauce
1/2 dried cranberries (you can also use raisins or other dried fruits)
1 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 400 degrees.
In a large bowl, combine eggs (beat first), brown sugar, oil, applesauce, and cranberries. Set aside.
In a small bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.
Add dry ingredients to wet ingredients and fold together until just mixed.
Line a 12 muffin/cupcake pan with paper liners (or grease if not using paper liners) and fill each about 80 percent full with batter. You should use all the batter for the 12 muffins.
Bake at 400 degrees for 20-25 minutes until muffins are golden brown and test done with a toothpick inserted into the center coming out dry.
Remove from muffin pan and allow to cool. Enjoy!
