How To make Apple Corn Johnny Cake
1 c Corn meal
3/4 c Rice flour
4 ts Baking powder
1/2 ts Salt
2 tb Sugar
2 Eggs, separated
2 tb Canola oil
1 3/4 c Applesauce (14 oz can)
6 Bacon strips,cooked,crumbled
Breakfast idea without gluten or dairy. Serve warm with maple syrup or as a quickbread with soup or salad. In a large mixing bowl combine cornmeal, rice flour, baking powder, salt and sugar. Beat egg whites until stiff. To the dry ingredients, add egg yolks, oil, applesauce and bacon. Stir well. Fold in egg whites. Pour batter into greased 8x8 inch baking pan (or prepared muffin pan). Bake in 425 F oven for 45 min or until an inserted knife comes out clean. Serves 4-5. Source: Co-op advertising recipe Sept 93 Shared but not tested by Elizabeth Rodier

Todays Video I make a type of pancake make typically made from corn meal. Problem is this can make gritty cakes. To lighten this up Johnny Cakes, many recipes use flour. Here I use oat flour.
Johnny Cakes
1-1/2 cups Masa
1/2 cup Oat Flour
1 Egg
2-1/2 cups Milk
2 tablespoons Honey
1 teaspoon Baking Powder
Pinch of Salt
Apple Blueberry Compote
3 Apples peeled and diced
1/2 cup Sugar
1 teaspoon Cinnamon
1 Star Anise Pod
10 grinds (1/4 teaspoon) Nutmeg
1 ounce Apple Cider Vinegar
1 ounce AppleJack (Sub Calvados or white Wine
1/4 cup Dried Blueberries (Sub raisins or dried currants)
1935 Pennsylvania Dutch Apple Sauce Cake Recipe - Old Cookbook Show
Today on the old cookbook show we're doing a Pennsylvania Dutch Applesauce Cake recipe from one of our newest Old Cookbooks. This is an heirloom recipe that is vaguely like a snackin' cake recipe from Betty Crocker.
Dutch Apple Sauce Cake Recipe:
2 cups flour
1 cup apple sauce
1 cup brown sugar
1 cup raisins
½ teaspoon salt
½ cup butter
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon cloves
1 grated nutmeg
Mix butter, sugar and cloves, nutmeg, cinnamon. Mix the baking soda in the applesauce, then add the flour and apple sauce to the mixture. Bake in a moderate oven.

Johnny Cakes, Hoe Cakes, Journey Cakes, Shawnee Cakes, Johnny Bread, and Spider Cornbread are all names of the same bread. This recipe dates back to before the first American colonies. It is believed that this recipe was given to the early settlers by the Native Americans. Give these a try. They're very inexpensive to make, they're quite tasty, and they're gluten free!
Ingredients:
1 cup of yellow cornmeal
1/4 cup of water
1/4 cup of buttermilk
3/4 of a teaspoon of salt
1 1/2 teaspoons of baking powder
1 1/2 teaspoons of sugar
1 egg
Butter or bacon grease to cook it in

How To Make A Johnnycake Fruit Cobbler

When it comes to summer baking we like to look for two key parts in a recipe—short bake times and the use of fresh, seasonal summer fruit. Thankfully this Johnnycake Cobbler recipe incorporates both of those things!
JOHNNYCAKE FRUIT COBBLER RECIPE:
Filling Ingredients
6 large peaches
4 plums
1/3 cup raspberries
4 tbsp butter
½ cup sugar
1 tsp vanilla
1 tbsp corn starch mixed with 3 tablespoons sugar
Filling Directions
1. Melt the butter and sugar together in a medium size pan, add the fruit and cook until the fruit starts to soften. Remove from the heat and add the vanilla and corn starch and sugar mixture.
2. Pour into a 9x9 baking dish or individual dishes. Sprinkle the raspberries on top.
Johnnycake Ingredients
5 tbsp butter chilled
¼ cup sugar
½ cup corn meal
1 ¼ cup all-purpose flour
¼ tsp salt
¼ tsp baking soda
3 tsp baking powder
2 cups heavy cream
Johnnycake Directions
1. Mix the dry ingredients in a bowl and rub in the chilled butter. Add the cream and mix. Spoon mixture on top of the fruit mixture and spread evenly.
2. Brush with melted butter and sprinkle with sugar. Bake at 350F degrees for about 45-55 minutes until set and golden brown. 3. Let the cobbler sit for 10 to 15 minutes before serving. Garnish with powdered sugar and fruit, serve with vanilla ice cream if desired.
Note: Nectarines, apricots, apples, blueberries and pears can be substituted for the peaches and plums.
