1 1/2 c Apples; unpeeled, shredded
1/4 c Apple juice; unsweetened
1/2 c Granulated sugar
3/4 c Dried cranberries; or
-raisins 1 lg Egg
1/2 c Brown sugar, packed
1 ts Vanilla extract
1/4 c Vegetable oil
1 c All-purpose flour; u
-nbleached 1/2 c Rye flour
1 1/2 c Multigrain cereal; q
-uick-cooking
such as quaker 1 ts Baking powder
1 ts Baking soda
2 ts Pumpkin pie spice
Recipe by: The New Dr. Cookie Cookbook Preheat oven to 375 degrees; coat 2 cookie sheets with nonstick cooking spray. Combine the shredded apple, apple juice, granulated sugar and cranberries; set aside. Beat the egg, brown sugar, vanilla extract and oil with an electric mixer until smooth. Add the apple mixture and stir it into the batter by hand. Add the flours, cereal, baking powder, baking soda and pie spice; stir into the batter by hand. Let the batter sit for about 5 minutes to absorb all of the liquid. Drop by rounded teaspoonfuls about 2 inches apart onto the cookie sheets and bake for 10 to 12 minutes, or until the cookies are lightly browned. Cool on wire racks. 14g (3 teaspoons) baking powder
2 apples
icings sugar
Optional: add cinnamon to icing sugar
Cup 250ml
Bake at 180*C for 20 minutes or until golden.

- 2 eggs
- 150 grams of sugar (3/4 cup)
- 80 grams of melted butter

• apples – 21 oz / 600 g
• all-purpose flour – 12 oz / 350 g
• 2 eggs
• sugar – ½ cup / 100 g
• butter – 3,5 0z / 100 g
• baking powder – ½ oz / 16 g
• powdered sugar – 1 tbsp
• cinnamon – ½ tsp

• oven
• baking tray
• parchment paper
• mixer or whisk
• bowl
???? Preparation:
1. Mix 2 eggs until frothy, add the sugar and keep mixing until the mixture grows white.
2. Add the melted butter and continue mixing on low speed until well combined.
3. Add the half of indicated flour and mix until smooth, add more of the flour and baking powder and keep mixing the pastry.
4. As soon as the pastry thickens keep mixing with a spoon, add the rest of flour and mix with a spoon.
5. Peel off the apples and cut into small pieces, add into the pastry and mix well.
6. Cover a baking tray with a sheet of parchment paper and lay out the pastry with a tablespoon at the rate of 1 tbsp – 1 cookie.
7. Preheat oven to 350°F /180°C and bake the cookies for 20 minutes.
8. Let the baked cookies cool down and sprinkle with the powdered sugar and cinnamon.

Ingredients:
1/2 cup (115g) Butter, softened
1/2 cup + 2 tablespoons (125g) Brown sugar
1 Egg, large
2 cups (250g) Flour
1½ teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1/4 teaspoon Cinnamon
3/4 cup + 1 tablespoon (200g) applesauce
1/3 cup chopped walnuts (optional)
Directions:
1. Preheat oven to 200C (400F). Line two baking trays with parchment paper and set aside.
2. In a bowl whisk butter and sugar until light and creamy. Add egg, vanilla extract and mix until combined.
3. Add applesauce and whisk until combined.
4. In a separate bowl mix flour, baking powder, baking soda, salt and cinnamon.
5. Add flour mixture into the wet mixture and mix just until combined. Add chopped walnuts and mix.
6. Scoop a portion of the batter and drop onto prepared tray.
7. Bake for 10-12 minutes or until lightly golden.
