INGREDIENTS
3/4 c. apple cider 1 1/2 c. flour 1/2 tsp. cinnamon 1/2 tsp. baking soda 1/4 tsp. baking powder Pinch salt 1/2 c. butter, softened 2/3 c. packed brown sugar 1 egg 1 tsp. vanilla Cinnamon sugar, for rolling 1 bag caramel candies, unwrapped
DIRECTIONS
1. Preheat oven to 350° and line two baking sheets with parchment paper.
2. In a small saucepan over medium-high heat, bring the apple cider to a simmer. Cook until reduced to about 2 tablespoons. Let cool.
3. In a medium bowl, whisk together flour, cinnamon, baking soda, baking powder and salt. In a large bowl using a hand mixer, beat together butter and brown sugar. Add egg, vanilla and reduced apple cider and beat until combined. Add flour and mix until just combined.
4. Scoop about 2 tablespoons of cookie dough into a ball then flatten it slightly with your hand. Press the unwrapped caramel into the center of the dough, covering and sealing the caramel entirely with dough. Reshape it into a ball and roll in cinnamon-sugar. Place on cookie sheet and repeat with remaining dough and caramels. Freeze for 20 minutes.
5. Bake until the cookies are golden around the edges and set in the middle, 10-14 minutes. Let cool for on pan for 5 to 10 minutes before transferring to a wire rack to cool completely.

Apple Cider Cookies - No Stand Mixer Needed!
In this episode of Mark's Kitchen, I whip up some Apple Cider Cookies. They were pretty insane let me tell ya.
Ingredients (core recipe from Stephanie's Sweet Treats with my little twist) 1 cup Plus 4 Tablespoons butter (unsalted) 1 cup of apple cider 1 ¼ cup light Brown sugar ¼ cup granulated sugar 1 teaspoon vanilla extract 1 egg ¼ cup Apple sauce 3 cups All-purpose flour ½ teaspoon Baking powder ½ teaspoon Baking soda 1 teaspoon Salt 1 teaspoon cinnamon ¼ teaspoon nutmeg
Apple Cider Butter 2 tablespoon Brown butter (use from the brown butter you have on deck) 1 tablespoon Apple cider apple cider
Apple Cider Glaze 1 cup Powdered sugar 2 ½ tablespoon Apple cider
For the cookies: -Melt all your butter in the pan until it turns a nice brown color (about 7 minutes on medium heat) -Put in a separate bowl -Pour your apple cider in a sauce pot and let it reduce down to about 1/4 of a cup. This will concentrate the liquid to ensure you have maximum flavor -While that is reducing, add your flour, baking powder, baking soda, salt, cinnamon & nutmeg to a mixing bowl and mix until combined -In a separate down add your reduced apple cider, butter, brown sugar, sugar, vanilla, egg, apple sauce and mix until combined. -Combine the wet and dry ingredients until everything is incorporated (do not over mix this batter or it will come out horribly) -Get the oven at 350 degrees and put the cookies about an inch or two apart on a cookie sheet and bake for 15 minutes.
When the cookies are baking: -Mix your cinnamon and sugar to make cinnamon sugar -Mix your powdered sugar and apple cider to make your apple cider glaze -Mix your left over butter and apple cider to make your apple cider butter
When the cookies are out of the oven: -Put them on a cooling rack -Brush them with your apple cider butter -Dunk them in your cinnamon sugar -Glaze the tops with your apple cider glaze
