Today's recipe is delicious you will be eating it for breakfast every day of this week! Every time I travel, I enjoy trying food and getting to make some of the dishes I've had during my travels brings me back to those special times.
Isn't it cool how a pancake recipe can take you back to Amsterdam and Bali at the same time? This vegan and gluten free pancake recipe did exactly just that for me and I hope you can also get to experience a little bit of the world by trying this recipe at home! As usual, if you have food allergies I GOT YOU COVERED, this pancake recipe is egg free, dairy free, soy free, nut free, and gluten free. Nothing like a good and tasty allergy friendly vegan recipe for those of us who wouldn't have this delicious treats otherwise.

Mac and Cheese Pancakes (With Optional Hot Dog)

Ingredients
1 1/3 cups hand-grated sharp Cheddar (see Cook's Note)
1 1/3 cups pre-grated mild Cheddar
Pancake Batter, recipe follows
2 cups cooked elbow macaroni
4 hot dogs, sliced into 1/4-inch circles, optional
Nonstick cooking spray, for the pancakes
3 scallions, thinly sliced
Habanero Maple Syrup, recipe follows
Pancake Batter:
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 eggs
2 1/2 cups buttermilk
Habanero Maple Syrup:
1 habanero pepper
4 cups Vermont maple syrup
Directions
Blend together the hand-grated and pre-grated Cheddars in a bowl. Set aside.
Preheat griddle to medium heat. Ladle 4 pancakes on the griddle at a time; do not overcrowd. Add 1/4 cup macaroni to each pancake, followed by 1/2 hot dog per pancake, if using, followed by 1/3 cup Cheddar per pancake. When you notice the edges bubbling vigorously, spray the entire pancake and griddle with nonstick spray, then flip the pancakes. Press down on the pancakes with a great deal of force (think panini style).
Cook until the cheese is lightly browned, about 3 minutes. Remove from the griddle, sprinkle with scallions and serve with warm Habanero Syrup. Repeat to make 4 more.
Pancake Batter:
Mix flour, baking soda, salt, eggs and buttermilk in a bowl until just combined; your batter should look lightly lumpy but combined. Set aside for at least 2 hours.
Habanero Maple Syrup:
Slice habanero in half and place in a saucepan with maple syrup. Bring up to a full boil and turn off right away to avoid boil-over. Let stand for 3 hours. Strain out pepper.
Cook’s Note
Use a combination of hand-grated and pre-grated Cheddar. This step is important to the texture of your pancake. Letting pancake batter sit overnight gives it a better texture. Shopsin's in NYC was our inspiration for this dish, but we like to think we have made it our own through the combination of our Habanero Maple Syrup, scallions, sliced hot dogs and Vermont cheeses. It blends our love of breakfast for dinner, my partner Kortnee Bush's lunch lady days and my husband's childhood favorite, hot dog slices in pancakes. Quesadilla crunch with mac and cheese vibes!

Cinnamon Apple Cottage Cheese Pancakes Featuring Prairie Farms Dairy
In this video I show you how to make Cinnamon Apple Cottage Cheese Pancakes using a few different Prairie Farms Dairy products. These pancakes are delicious. Not overly sweet, great texture, and nothing like traditional pancakes. These were very light and didn't leave me feeling overly stuffed after eating them. My kids loved them as well!! Apple Cheddar Pancakes with Crispy Bacon Recipe
Here’s a gourmet yet simple breakfast favourite featuring the sweet and savoury combination of apples, Cheddar and crispy bacon…which no one can resist!
Ingredients
3/4 cup (175mL) STIRLING - Churn 84 butter, melted and divided
1 cup (250mL) BLACK RIVER - Maple Cheddar Cheese, shredded
6 slices thick-cut bacon
4 apples, peeled, cored, halved and sliced
3/4 cup (175mL) maple syrup, divided
2 tsp (10mL) lemon juice
1/4 tsp (1mL) ground cinnamon
2 cups (500mL) all purpose flour
1 tbsp (15mL) granulated sugar
2 tsp (10mL) baking powder
1 tsp (5mL) baking soda
1/4 cup (50mL) walnuts, chopped and toasted
1 1/4 cups (300mL) buttermilk
2 eggs
1 tbsp (15mL) dried cherries
Instructions
1. In non-stick skillet, cook bacon over medium heat for 5 to 6 minutes or until browned and crisp. Transfer to paper towel–lined plate. Chop or crumble bacon and set aside.
2. Wipe out skillet; heat 1/4 cup (60 mL) butter in skillet set over medium heat; cook apples and 1/4 cup (60 mL) maple syrup for 7 to 8 minutes or until tender. Stir in lemon juice and cinnamon.
3. In large bowl, whisk together flour, sugar, baking powder and baking soda. Stir in walnuts, shredded cheese and bacon. In separate bowl, whisk together buttermilk, eggs and 1/4 cup (60 mL) of melted butter until blended; stir into flour mixture until just combined (batter will be lumpy). Transfer batter to measuring cup or pitcher with pourable spout.
4. Heat large skillet or griddle over medium heat; brush with some of the remaining butter. For each pancake, pour 1/4 cup (60 mL) batter into skillet, leaving space between each pancake. Cook, in batches, for 1 to 2 minutes or until bubbles form on surface. Flip over; cook for 1 to 2 minutes or until golden brown, wiping pan between batches and brushing with remaining butter as needed.
5. Hold pancakes in warm oven until ready to serve. Serve pancakes topped with sautéed apples, dried cherries and drizzle of remaining maple syrup.
*For added bacon flavour, double the amount of bacon.
