We get out the Ninja 15 in 1 and decide to cook this Apple Cake on the steam bake setting. Let's see how it comes out.
Here is the ingredients to our Apple cake.
225 grams of self raising flour,
225 grams of sugar,
3 small eggs,
150 grams of melted butter,
1 large cooking apple,
1 teaspoon of baking powder and half a teaspoon of cinnamon,
half a teaspoon of Almond extract.
Cook at 165 deg C for 45 minutes

Apple Crumble Cake:
Ingredients:
Butter ½ cup
Caster sugar 2/3 cup
Eggs 3
Vanilla essence 1 tsp
Cream cheese ½ cup
Corn flour 3 tbsp
Baking powder 1 ½ tsp
Flour 2 cups
Apples (peeled and chopped) 600gm
To Make The Crumble:
Butter 1/3 cup
Flour 2/3 cup
Ground almonds 1 cup
Sugar 2 tbsp
Cinnamon 1 tsp
Method:
Beat butter and caster sugar, add eggs one at a time, add cream cheese, vanilla essence, sift in corn flour, baking powder and flour. Fold in the apples. Turn out mixture in a greased and lined pan.
To make the crumble, melt butter mix in the ground almonds, flour, sugar and cinnamon. Mix till crumbly and add on top of the cake. Bake at 180 degrees C for 40 minutes or until done.
Spicy Steamed Fish:
Ingredients:
Lemongrass (bruised and cut in half) 2 stalks
Fish fillets ½ kg
Lemon slices to serve
Coriander leaves to serve
Red chili (finely sliced) 1 (to serve)
Sea salt to taste
Steamed rice to serve
For The Sauce:
Red chilies (chopped) 4
Coriander roots (chopped) 2
Garlic 4 cloves
Sea salt ½ tsp
Chicken or fish stock ¼ cup
Fish sauce 3 tbsp
Lemon juice 3 tbsp
Sugar 1 tsp
Method:
For the sauce, pound the chilies, coriander roots, garlic and salt to a rough paste. Transfer to a bowl and mix with the stock, fish sauce, lemon juice and sugar. Place the fish on top of the lemongrass. Season the fish with salt. Place the fish in a steamer. Cover with a lid and steam for 5 minutes. Then remove the lid and pour the sauce over the fish. Steam for a further 6-7 minutes or until the fish is cooked through. Garnish with lemon slices, coriander and chili slices. Serve with steamed rice.
Baking Mad Monday: Scandinavian Apple Cake
Baked on the deck of Ventura, here's my delicious Scandinavian Apple Cake recipe.
Ingredients:
150g butter
5 apples
150g light muscovado sugar
2 eggs
300g flour
2 tsp baking powder
1 tsp mixed spice
1 tsp cinnamon
1/2 tsp nutmeg
200g golden sultanas
100ml of apple brandy
100g chopped roasted walnuts (optional)
Method:
Pre-heat the oven to 180C.
Melt the butter and allow to cool. Grate the apple apart one into a bowl, add the sugar and butter and mix well. Add the egg and mix well.
Sift all dry ingredients together, add to the bowl and mix well, finally fold in the fruits and the nuts. Pour into a prepared cake tin.top with the slices from the leftover apple
Bake for 45 - 60 minutes. If you're baking onboard Ventura like I was, go for a quick dip in the pool ;)
Remove from the oven, allow to cool in the cake tin for 5 minutes, then place on a cooling rack. glaze with a bit of hot apricot jam.
