1 c Flour,all-purpose 3 t Baking powder 1 t Salt 2 T Shortening 1 c Sweet potatoes,mashed 1/2 c Milk 1. Preheat oven to 400'F. 2. Sift flour, baking powder, and salt into mixing bowl. Cut in shortening. Add potatoes and mix thoroughly, then add enough milk to make a soft dough. Turn out onto a lightly floured board and roll out to about 1/2" in thickness. Cut into squares. 3. Place squares not touching on ungreased baking sheet bake in preheated oven for 12-15 mimutes. 4. Serve warm, split, and spread with room-temperature butter.

Ingredients: 8X8 glass or metal pan 30 lemon sandwich cookies 6 Tbsp butter, melted 8 oz cream cheese, softened 1 cup powdered sugar 1 Tbsp lemon juice 1 3.5 oz package instant lemon pudding mix 1 1/2 cups milk 8 oz tub whipped topping
Directions: In food processor, crush lemon sandwich cookies. If you don't have a food processor, place cookies in a zip top bag and crush with a rolling pin or a heavy bottom skillet. Stir in melted butter. Reserve a couple of tablespoons of crumbs for garnish. Place crumbs in 8X8 pan and pat down flat. In a medium size bowl, add cream cheese, powdered sugar, and lemon juice. Mix well with a hand mixer. Pour over cookie layer. In a separate bowl, combine lemon pudding mix and milk. Whisk together until thick. As pudding sits, it will thicken more. Spread over cream cheese mixture. Spread whipped topping over pudding mixture. Sprinkle reserved cookie crumbs on top. Refrigerate at least 4 hours until set.
