How To make Annie's Thumprint Cookies
1 1/2 c Sifted flour
1/2 ts Salt
1/2 c Margarine
1/2 c Brown sugar; firm pack
1 ts Vanilla
1/4 c Chocolate chips; chopped
2 tb Milk
3/4 c Confectioner's sugar; sifted
Filling: 3/4 c Chocolate chips
1 tb Shortening
1 tb Water
1 ts Vanilla
2 tb Light corn syrup
Sift flour and salt. Blend butter, sugar, vanilla. Add flour mixture, milk, 1/4 cup chopped chips. Form in 1" balls. Make thumbprint in center. Bake at 357 degrees for 10-12 minutes. Roll in confectioners' sugar while warm. Cool. For filling, melt 3/4 cups chocolate chips and shortening in a double boiler. Stir ingredients and stir until smooth. Let cool 5 minutes. Fill cookies. Annie's notes: as kids, these were by far my brother's and my favorite cookies at Christmas time (well, besides cut-outs). I still make a double batch for Christmas here; although my brother is 44, he still loves his cookies! Me, too, of course! -----

The one thing every kitchen witch kneads! A Candied Ginger Honey Brioche!
I had a ton of fun working with this recipe, it's one of my altime favorite bread recipes and I use it all the time just with different additives and tweaks here and there and I hope you all enjoy :)
Ingredients:
Candied Ginger
a good chunk of ginger
2 cups of sugar (plus 1/2 cup more)
water (enough to cover the ginger) plus 2 cups more for second simmering
Brioche
2/3 cup warm milk
2 1/4 tea yeast
1/4 cup honey
5 eggs
3 1/2 - 4 cups flour (I use bread flour)
1 tea salt
4 tbs butter (room temp)
1 1/2 sticks cold butter
To Make:
begin by candying the ginger - best to do the night before
peel and dice the ginger
place in a saucepan and cover with water, simmer for 20 minutes, then drain out the water
back in the saucepan, add in 2 cups of sugar along with 2 cups of water, bring up to a boil then reduce to a simmer for 45 minutes.
drain the ginger again - I recommend reserving the ginger syrup you will have now made - it's delicious and can be used in magick as well!
then spread out the chunks of ginger on a plate and allow to dry overnight
the next day roll the ginger chunks in the 1/2 of sugar to prevent sticking and enjoy a few!
once this is done it's time to begin the work on the bread!

▶️ Ingredients:
• 150 g (1 cup + 1 tbsp) All-Purpose Flour:
• 110 g (1 stick) Semi-cold Butter, cut into small pieces
• 60 g (2 oz) Sweetened Condensed Milk:
• 1 tsp Vanilla Extract (optional):
▶️ Fillings options:
• Nutella
• Jam
• Condensed Milk
▶️ Kitchen Equipment:
• Glass Bowl Set:
• Rolling Pin:
• Cookie Cutter:
• Drying Rack:
▶️ Method and instructions:
• In a large bowl, add the butter and the flour.
• Use your fingers to rub the butter into the flour.
• Add the condensed milk, and bring the dough together using your hands.
• Roll out the dough, and cut out the cookies.
• For half the cookies, make a hole in the center. These will form the top halves of the sandwich.
• Place the cookies onto a baking sheet lined with parchment paper.
• Bake in a preheated oven at 160 °C (360 °F) for 10 minutes.
• Allow the cookies to cool before assembling into sandwiches, with a little condensed milk for the filling.
▶️ Important tips:
• Take the butter out of the fridge 30 minutes before using.
• Store the cookies in an air-tight container
