VANILLA COOKIES

1 cup (2 sticks ) butter
1/2 cup vanilla sugar
3 eggs
1 teaspoon vanilla extract
4 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup cornstarch
1 cup powdered sugar
2-3 tablespoons water

PINE NUTS HONEY COOKIES

2 1/4 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon anise seeds
1/4 cup sugar
1/2 cup ( 1 stick ) butter
zest of 1 orange, grated
1/2 cup honey
1/2 cup pine nuts

Mushroom and Pine Nuts Pilaf | मशरूम ऐंड पाइन नट्स पिलाफ | Sanjeev Kapoor Khazana
Try this interesting recipe if you're bored of the same old pulaos and biryanis!
MUSHROOM AND PINE NUTS PILAF
Ingredients
1½ cups Basmati rice, soaked
2 oyster mushrooms
3-4 dried shitake mushrooms, soaked
5-6 button mushrooms
5-6 brown Shimeji mushrooms
5-6 white Shimeji mushrooms
2 tbsps toasted pine nuts + for garnish
2 tbsps olive oil
1 large onion, sliced
2-3 star anise
2 bay leaves
4-5 green cardamoms
5-6 cloves
Salt to taste
4-5 dates, roughly chopped
½ tsp garam masala powder
3 cups vegetable stock
2 tbsps freshly chopped parsley leaves + for garnish
Fried onion for garnish
Method
1. Roughly chop oyster mushrooms, and strain the shitake mushrooms and roughly chop. Reserve shitake soaked water.
2. Roughly chop button mushrooms, brown Shimeji and white Shimeji, and set aside.
3. Heat olive oil in a non-stick deep pan, add onion, and sauté well. Add star anise, bay leaves, green cardamoms, cloves and mix well. Cook till onion turns light golden brown.
4. Add mushrooms and sauté well. Add salt and sauté for 2-3 minutes on high heat.
5. Add ¾ cup water and mix well. Add reserved water and mix well. Cook for 2-3 minutes.
6. Add pine nuts and mix well. Add roughly chopped dates and mix well. Add garam masala powder, mix well and cook for 1 minute.
7. Add rice and mix well. Adjust the salt, mix well and add vegetable stock, mix well and let it come to a boil on high heat.
8. Reduce the heat, cover and cook till the rice is cooked completely.
9. Open the lid and sprinkle chopped parsley and mix well. Take it off the heat.
10. Transfer to a serving plate, garnish with pine nuts, chopped parsley and fried onion. Serve hot.

The flavour of aniseeds/sauf in freshly baked cookies is really nice.
ANISEED COOKIES
Ingredients
4 grams aniseeds
200 grams refined flour (maida)
3 eggs
1½ cups castor sugar
A pinch of salt
1.5 grams baking soda
Icing sugar for dusting
Method
1. Preheat oven to 165˚ C.
2. Put eggs in a bowl. Add castor sugar and whisk using an electric beater till light and foamy.
3. Sift together flour, salt and baking soda and fold well. Add aniseeds and mix well.
4. Put spoonful’s of the mixture on a baking tray.
5. Put the tray into the preheated oven and bake for 10-15 minutes. Remove from oven and cool.
6. Dust some icing sugar and serve.

1 cup vegetable shortening, 1 cup granulated sugar, 4 eggs, 1/4 cup milk, 1 1/2 Tablespoon vanilla, 4 cups flour, 2 Tablespoon Baking Powder. Cream shortening sugar, eggs, milk and vanilla. Add dry ingredients till mixed well. Roll a piece of dough about 2 1/2 inches long 1/2 inch in thickness form a letter S with dough on ungreased cookie sheet, Bake at 350 for 10- 12 minutes.Cool cookies on rack. Mix 2 cups powder sugar, 2 1/2- or 3 Tablespoons of water or milk to thickness you want for icing. Dip cookie into icing place on rack till dry.Yields 60 cookies Cookie size baked is 3 1/4 long.

Today's low carb high protein cookies feature Amaranth flour, Indian Millet flour (Ragi) Nuts, stevia, and healthy fat.
Error in the video---That is Indian millet flour (Ragi) not barley, i kept saying barley...
Stevia is slightly bitter, but if you use a very small bit of natural sweetener, like a dash of sour cherry juice, coconut water, the Eden Soymilk that has barley malt in it (not gluten free?) or some raw coconut sugar, it brings out the sweet of the stevia without the bitterness.
I use a high quality coffee grinder to grind my nuts and seeds fresh.
I was out of pumpkin seeds, but would normally use those. Here was
1 tsbsp each Walnuts, Cashews, and Pine Nuts
2 tsp brown sesame seed
1.5 tsp ground flax seed or hemp seed
1/4 tsp anise
Pinch of salt
Grind in the grinder with a pinch salt
Combine with
2 tbsp Amaranth flour
2 packets of Stevia in the raw
Now add liquids:
1/4 tsp Vanilla extract
⅛ tsp Almond extract
2 tsp or more peanut, almond, sesame, or coconut oil
Enough soy milk, coconut water, and sour cherry juice to make a dough, maybe 2 tbsp total?
Mash with a spatula until it looks like a nice oily cookie dough. As you mash and the amaranth absorbs fluid you may need to add more fluid
Preheat toaster over to 450 depending on oven.
Lay out some parchment paper on the toaster oven pan
Mold the cookies. You might need some water or oil on your hands.
I like to flattern them out and decorate with pine nuts or sesame seeds or both. One of them has a dollup of raspberry jam in the center.
On my oven they need to bake for about 45 minutes. Halfway thru i turn the pan so the front are now in the back....
