Ingredients
Melted butter 1⁄2 Cup (8 tbs)
Shortening 1⁄4 Cup (4 tbs)
All purpose flour 3 Cup (48 tbs)
Baking powder 5 Teaspoon
Salt 1 Pinch
Sugar 3⁄4 Cup (12 tbs)
Eggs 4
Vanilla extract 2 Teaspoon
For glaze
Powdered sugar 2 Cup (32 tbs)
Anise extract 2 Teaspoon
Milk 6 Teaspoon
Nonpareil decors 2 Tablespoon (For topping)
Directions
GETTING READY
1. Preheat the oven to 375 F.
MAKING
2. Put melted butter and shortening in a stand mixer. Mix them together.
3. Sift and add flour, baking powder and salt to the mixer.
4. Blend everything together. Meanwhile, drop in sugar and blend that as well.
5. While the batter is still getting blended, crack four eggs into the batter and continue to mix.
6. Scrape the sides of the bowl and mix everything for a minute.
7. Spoon cookies to a cookie sheet with the help of a spoon.
8. Put the cookie sheet in the oven for 8 to 9 minutes or until done.
9. Let the cookies cool on the side.
10. Meanwhile, prepare the glaze by whisking together powdered sugar, anise extract and milk until all glossy.
FINALIZING
11. Spread glaze on the cookies when they are cold.
12. Sprinkle nonpareils over them.
SERVING
13. Serve these cookies with coffee or otherwise and enjoy.

Nonna's Easter Cookies - Mini Easter Egg in a Hazelnut'ty Little Nest (e102)
Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), shows us how to make her super cute Easter cookies that look like little bird nests. These are easy to whip up and a favourite with young and old, so do give them a try!
Nonna makes these as a hazelnut-based cookie, but if you prefer another nut, by all means, substitute as desired. You could use Amaretto in lieu of Frangelico and almonds in lieu of hazelnuts, for example. Either way, the flavour is enhanced if you roast the nuts first.
Here are the ingredients you will need:
- 1 cup of butter, softened / 227 grams
- 1 cup of sugar / 200 grams
- 2 large eggs
- 3 cups of all-purpose flour / 360 grams
- a pinch of salt
- a teaspoon of Frangelico, or substitute with vanilla (5 mL)
- 3 cups of chopped hazelnuts,
1 cup for the dough, and 2 cups for rolling
1 cup of chopped nuts is about 125 grams
- 2 egg whites, beaten to dip the dough in before rolling in nuts
- 60 mini eggs (Cadbury is used here)
In a standing or electric mixer, cream butter and sugar for a few minutes. Then add 2 eggs, a pinch of salt, 1 cup of chopped hazelnuts, and slowly add in 3 cups of all-purpose flour. Last, add a teaspoon of Frangelico hazelnut liqueur. Then test the dough to ensure that it rolls well and holds together.
Prepare two small bowls for rolling - the first with 2 beaten egg whites and the 2nd with 2 cups of chopped hazelnuts.
Roll the dough into one-inch balls, dip in egg white, then roll in the nuts and repeat. This recipe made 60 cookies. Press in a mini Easter egg (Cadbury) to the middle of each 'nest' and place on a parchment-lined baking tray.
Bake in a preheated oven at 375 F for 15 minutes, cool, and enjoy!

MUSHROOM AND PINE NUTS PILAF
Ingredients
1½ cups Basmati rice, soaked
2 oyster mushrooms
3-4 dried shitake mushrooms, soaked
5-6 button mushrooms
5-6 brown Shimeji mushrooms
5-6 white Shimeji mushrooms
2 tbsps toasted pine nuts + for garnish
2 tbsps olive oil
1 large onion, sliced
2-3 star anise
2 bay leaves
4-5 green cardamoms
5-6 cloves
Salt to taste
4-5 dates, roughly chopped
½ tsp garam masala powder
3 cups vegetable stock
2 tbsps freshly chopped parsley leaves + for garnish
Fried onion for garnish
Method
1. Roughly chop oyster mushrooms, and strain the shitake mushrooms and roughly chop. Reserve shitake soaked water.
2. Roughly chop button mushrooms, brown Shimeji and white Shimeji, and set aside.
3. Heat olive oil in a non-stick deep pan, add onion, and sauté well. Add star anise, bay leaves, green cardamoms, cloves and mix well. Cook till onion turns light golden brown.
4. Add mushrooms and sauté well. Add salt and sauté for 2-3 minutes on high heat.
5. Add ¾ cup water and mix well. Add reserved water and mix well. Cook for 2-3 minutes.
6. Add pine nuts and mix well. Add roughly chopped dates and mix well. Add garam masala powder, mix well and cook for 1 minute.
7. Add rice and mix well. Adjust the salt, mix well and add vegetable stock, mix well and let it come to a boil on high heat.
8. Reduce the heat, cover and cook till the rice is cooked completely.
9. Open the lid and sprinkle chopped parsley and mix well. Take it off the heat.
10. Transfer to a serving plate, garnish with pine nuts, chopped parsley and fried onion. Serve hot.

Recipe: Pignoli Cookies
Pignoli Cookies are an Italian favorite. Pifnoli nuts are expensive but well worth the cost in these delicious treats.
Serving: 48 cookies depending on size

Ingredients

1-1/4 cups almond paste
1/2 cup sugar
2 egg whites
1 cup confectioners' sugar
2 more egg whites beaten
1-1/2 cups pine nuts

Directions
—
Set oven to 325 ° F
In a small bowl or mixer, beat almond paste and sugar until crumbly.
Mix in 2 egg whites.
Gradually add confectioners sugar and mix well.
Whisk remaining 2 egg whites in a small bowl.
Place pine nuts in another small bowl.
Shape dough into 1-in. balls.
Roll in egg whites and coat with pine nuts.
Place 2 in. apart on parchment paper. Flatten slightly.
Bake until lightly browned, about 20-24 minutes.
Cool for 1 minute before removing from pans to wire racks.
Store in an airtight container.
