How To make Anise Pillows/Pfefferneuse
1 2/3 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Lemon peel; grrated
1/2 ts Salt
1/4 ts Ground cinnamon
1/4 ts Ground nutmeg
1/8 ts Ground cloves
1/8 ts White pepper
1/3 c Margarine; softened
1/2 c Sugar
1 Egg
1/2 c Milk
1/2 c Walnuts; finely chop
1/2 ts Anise seed
Confectioner's sugar In small bowl, combine flour, baking powder, lemon peel, salt, spices and pepper; set aside. In large bowl, beat together margarine and sugar until creamy; beat in egg. Add flour mixture alternately with milk, beating well after each addition. Stir in walnuts and anise seed. Drop dough by teaspoonfuls, 2" apart, on lightly greased baking sheets. Bake at 350'F. for 15-17 minutes. Cool slightly on wire racks.Roll in confectioners' sugar while still warm; cool completely. Makes 5 dozen cookies. -----

Honey Pfeffernüsse - no butter
=========================
180 grams of honey
125 grams of sugar
1 egg
I level tsp cinnamon
½ tsp anise
pinch of ground cloves, cardamom and white pepper
375 grams of plain flour
3 level teaspoons baking powder
Glaze:
250g powdered sugar
3-4 tablespoons hot water (start with 3 and add more if needed)
Method:
Melt the honey and sugar on the stove and allow to cool again.
Then stir in the egg and spices, finally the flour mixed with baking powder.
Form a roll of 2-3 cm d on a board dusted with flour, cut off pieces and shape into balls.
Place them on a well-greased baking sheet and bake.
Bake: 8 - 12 min., electric oven 180 Celcius
When cool, dip in icing

Soft Pfeffernusse - with butter:

* 21/4 cup plain flour
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 3-4 teaspoons Lebkuchengewürz
* 1/4 teaspoon finely ground white pepper
* 1/2 cup packed brown sugar
* 1/3 cup pure golden syrup
* 5 tablespoons unsalted butter
* 3 tablespoons thicken cream
* 1 large egg
* For the Glaze:
* 21/2 cups powdered sugar
* 3-4 tablespoons hot water (start with 3 and add more when required)
INSTRUCTIONS
1. In a small bowl, combine the flour, baking soda, salt, Lebkuchengewuerz, white pepper and almond meal. Set aside.
2. Combine the brown sugar, honey, butter, and cream in a medium saucepan and heat, stirring frequently, until melted and the sugar is dissolved. Remove from heat and let sit 5 minutes. Stir in the flour mixture.Once incorporated stir in the egg until thoroughly combined. The dough will have a nice glossy sheen. It will be very sticky and that's how it should be.
3. Turn the mixture out onto some plastic wrap and wrap the dough tightly. Refrigerate overnight or for up to two days.
4. Preheat the oven to 350 degrees.
5. Remove the dough from the plastic wrap and immediately roll it into two strands, each 3/4 inch thick. Slice the rolls into 3/4 inch thick rounds and roll each round into a ball (each ball should be about 3/4 inch large).Work quickly while the dough is still chilled.Note: The size is just personal preference, you can make them larger if you prefer.
6. Place the cookie balls on a line cookie sheet and bake for about 15 minutes or until golden brown. Remove and let the cookies cool completely.
7. To make the glaze, combine the powdered sugar and water until smooth.
8. Dip each cookie in the glaze, letting the excess drip off, and place them on a wire rack positioned over a cookie sheet (to catch the drips) and let them sit until the glaze is fully hardened.
Lebkuchengewurz Spice Mix (use 4 tsp for Pfeffernusse)
* 2 1/2 tablespoons ground cinnamon
* 2 teaspoon ground cloves
* 1/2 teaspoon ground allspice
* 1/2 teaspoon ground coriander
* 1/2 teaspoon ground green cardamom
* 1/2 teaspoon ground ginger
* 1/2 teaspoon ground star anise
* 1/4 teaspoon ground nutmeg
