How To make Angel Hair Pasta with Lemon& Garlic
1 teaspoon olive oil
2 cloves garlic
peel & mince
1/2 cup dry white wine
1/4 cup lemon juice :
fresh squeezed
1 cup chopped tomato
4 ounces angel hair pasta spinach
4 ounces angel hair pasta :
semolina
1/4 cup chopped fresh basil
2 tablespoons parmesan cheese -- freshly grated
ground black pepper to taste
Bring a large pot of water to a boil over high heat and maintain at a boil.
Put the olive oil and garlic in a saute' pan and cook over medium heat just until the garlic begins to brown. Remove the saute' pan from the heat and pour in the wine. Return it to the heat. Cook for another 1 to 2 minutes, until the wine has been reduced by half. Stir in the lemon juice and tomato. Remove the pan from the heat.
Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute. Drain the pasta and put it into a warm serving bowl. Add the basil, Parmesan cheese, and black pepper, along with the tomato mixture. Toss and serve immediately.

Lemon Capellini

Ingredients
Good olive oil
Kosher salt and freshly ground black pepper
1 pound dried capellini
1/2 pound unsalted butter (2 sticks)
Zest and juice of 2 lemons, plus zest of 1 lemon for garnish
Directions
Drizzle some olive oil in a large pot of boiling salted water, add the capellini, and cook al dente.
Meanwhile, melt the butter in a large saute pan. Add the zest and juice of 2 lemons, 1 teaspoon salt, and 1 teaspoon pepper and bring to a simmer. When the pasta is cooked, use tongs to remove it from the pot and place it in the saute pan. Toss the capellini with the butter mixture. If the capellini is dry, add extra pasta water.
Place one serving of pasta on each of 6 plates. Garnish with grated zest of 1 lemon and serve immediately.
