How To make Ambrosia Cheesecake
1 1/2 c Flaked coconut
1/4 c Chopped almonds
2 T Butter or marg.; melted
24 oz Cream cheese; softened
1/2 c Sugar
1/4 c All-purpose flour
2 t Grated orange peel
1 t Vanilla extract
1/2 c Apricot nectar
1/2 c Cream of coconut
4 Large eggs
8 oz Crushed pineapple, drained
Sliced assorted fruits* 2 t Shortening; melted
1/4 c Semisweet-chocolate pieces**
1/4 c White-chocolate pieces**
*Note: Suggested fruits: bananas, seedless green and red grapes, kiwifruit, canned mandarin-orange slices, strawberries, etc.) **Chocolate pieces should be melted. 1. Day before serving: Preheat oven to 350 degrees. In medium bowl,
combine coconut, almonds and butter; mix well. Press mixture into bottom of 9-inch springform pan. Bake until golden, about 15 minutes. Cool. 2. In large bowl of electric mixer, at high speed, beat cream cheese,
sugar, flour, orange peel and vanilla until fluffy. Beat in apricot nectar and cream of coconut. Beat in eggs, one at a time, until blended. Stir in pineapple; pour into prepared crust. Bake 1 hour and 10 minutes, or until set. Cool in pan on wire rack; refrigerate overnight. 3. Just before serving, arrange fruit over top of cake. Stir one teaspoon
melted shortening into each of melted semisweet and white chocolates until blended. Place each mixture in a separate small pastry bag fitted with small plain tip; pipe over fruit.

While many versions use artificially-flavored store-bought whipped cream, today we're bumping up the flavor by making our own homemade whipped cream and tweaking this recipe to dessert salad perfection!

Ingredients
3/4 cups heavy cream (180ml)
1/4 cup powdered sugar (35g)
1/2 teaspoon vanilla extract
1/2 cup sour cream (120g)
11 oz can mandarin oranges, well drained (312g)
10 oz ¾ cup maraschino cherries (without stems)
1 8 oz can pineapple tidbits, well-drained
1 1/2 cups sweetened shredded coconut (120g)
4 cups mini marshmallows¹ (200g)
Instructions

00:50 Combine heavy cream, powdered sugar, and vanilla extract in a large bowl. Use an electric mixer to beat until mixture is thick, billowy, and the consistency of Cool Whip.

02:05 In a separate bowl, stir together oranges, cherries, pineapple, coconut, and mini marshmallows.
03:01 Add whipped cream/sour cream mixture and stir until completely combined.
03:25 Cover bowl and chill in refrigerator for at least 1 hour before serving.
Notes
¹I like to use the rainbow/fruit flavored mini marshmallows for more of a tropical flavor, but classic white mini marshmallows work just as well!

This is an easy to make Newyork style cheese cake recipe for beginners with minimal ingredients, yet tasty.
Basic cheesecake recipe at home

New York Cheese Cake Recipe

Biscuits 15 to 20 Nos ( Gram Crackers or any other biscuit)
Butter 4 tbsp melted (1/4 cup or 57 g)
Cream Cheese 800 g (3 Cups )
Sugar 1 Cup (200g)
Egg 4 Nos
Vanilla Extract 1 tsp
Bake over a water bath at 350 F / 180 C for 1 hr
If you do not have cream cheese , this is how to make at home.
1 liter whole milk
2 teaspoons salt
4 tablespoon lemon juice or white vinegar
In a saucepan, heat the milk on medium heat, stirring gently .One the milk start to boil reduce heat and Add lemon juice one tbsp at a time while stirring the milk . When The milk curdles strain it , add salt and blend it to a cream consistency.
In this video I am using cream cheese spread which always gives me lighter and creamier textured cake.
