How To make Amaretto Cheesecake Cookies
1 c All-purpose flour
1/3 c Brown sugar
packed
6 tb Butter :
softened
1 pk Cream cheese 8 oz at room
Temp 1/4 c Granulated sugar
1 Egg
4 tb Amaretto
1/2 ts Vanilla
4 tb Almonds :
chopped
In a large mixing bowl, combine flour and brown sugar. Cut in butter until mixture forms fine crumbs. Reserve 1 cup crumb mixture for topping. Press remainder over bottom of ungreased 8 inch square baking pan. Bake for 12-15 minutes at 350^ or until lightly browned. In mixer bowl, thoroughly cream together cream cheese and granulated sugar. Add egg, amaretto, and vanilla; beat well. Spread batter over partially baked crust. Combine almondswith reserved crumb mixture; sprinkle over batter. Bake for 20-25 minutes. 5 eggs whites
Pinch of salt
4 1/2-5 cups almond flour (depending on the size of eggs)
1 1/2 cup granulated sugar
1/2 tsp vanilla extract
1-2 tsp almond extract (I prefer 2 tsp)
For coating:
1/2 cup granulated sugar
1/2 powdered sugar

1. separate 5 egg whites into a bowl then add a pinch of salt. Using an electric mixer, beat the egg whites until stiff peaks form.
2. Set that aside and sift 5 cups of almond flour with 1 1/2 cups of granulated sugar into a bowl.
3. Add about 1/3 of the almond flour mixture into the egg whites and fold it in gently with a spatula.
4. Now go ahead and add 1/2 tsp vanilla extract and 2 tsp of almond extract. Then quickly fold it in.
5. Add the second third of the almond flour mixture to the egg whites and gently fold it in again.
6. Sift in the remaining third of the almond flour mixture and fold it in one last time. at this point, the cookie dough should have a thick paste like texture.
7. Scoop out mounds of the cookie dough and place them into a plate of granulated sugar. Roll the scoop of cookie dough into the sugar, then take it into your hands and round it out to a ball.
8. Drop the ball into a bowl of powdered sugar and evenly coat it.
9. Place the cookies onto a baking sheet lined with parchment paper and bake at 325 degrees Fahrenheit for 25 minutes. As always baking time may vary depending on your oven.

Amaretto Cheesecake – Lynn’s Recipes
Lynn demonstrates how to make a delicious Amaretto Cheesecake. This would be a perfect dessert for a special meal or holiday. This was adapted from a recipe found on Pinterest.
For the Crust:
2 cups of Amaretti Cookie Crumbs (about 8 ounces of cookies)
2 Tablespoons Sugar
¼ cup melted butter
Filling:
2 (8 ounce) packages of cream cheese, softened
2 (8 ounce) containers of Mascarpone cheese, softened
1 cup granulated sugar
1 teaspoon vanilla paste or vanilla extract
¼ cup Amaretto Liqueur
4 eggs
3 Tablespoons all purpose flour
½ teaspoon salt
Topping:
1 cup heavy whipping cream
2 Tablespoons powdered sugar
¼ teaspoon almond extract
Crushed Amaretti cookies, for garnish
Preheat oven to 325°. Spray a 9” spring form pan with nonstick cooking spray and set aside.
In the bowl of a food processor add the Amaretti cookies and process until crumbled finely. Add the butter and sugar and mix until the mixture resembles wet sand.
Press the cookie mixture in the bottom and about 1” up the sides of the prepared spring form pan. Set aside
In the bowl of a standing mixer fitted with the paddle attachment, cream together the cream cheese and mascarpone for about 1 minute.
Add the sugar and continue to mix for 1 minute longer.
Add the eggs and vanilla and continue to mix on medium speed for 1 minute, making sure to scrape the sides of the bowl down between adding each ingredient.
Add the flour, salt and Amaretto and mix for another minute.
Pour the mixture into the prepared pan and tap it on the counter a couple of times to remove any air bubbles.
Place the pan on a baking sheet and bake it for 1 hour and 10 minutes, or until the sides of the cheesecake are set, but the center is still a bit wobbly.
Allow it to cool at room temperature for a few hours and then place in the refrigerator to cool completely overnight.
When ready to serve, whip the cream in a large bowl with the almond extract to form soft peaks. Add the powdered sugar and continue to whisk until it form stiff peaks.
Top the cheesecake with the whipped cream and garnish with crushed Amaretti cookies.

Icing Ingredients:
Amaretto:
8 oz of Marscapone Cheese
8 oz of Powdered Sugar
8 oz of Heavy Whipping Cream
1 tsp of Almond Extract
Limoncello Blueberry:
Simple Syrup
1/2 cup of Water
1/2 cup of Sugar
1 cup of Blueberries
1 large piece of Lemon Zest

Base/Crust Ingredients:
4 tbsp of melted Unsalted Butter
1 1/2 cups of finely crushed Biscotti Cookies
For the Limoncello cheesecake you can use biscotti cookies, graham crackers, or even lemon cookies. For the Amaretto cheesecake, you can use graham crackers or vanilla cookies. Crust should go into the oven for about 5 minutes. Allow crust to cool in fridge while you prepare your batter.

2 lbs of Whole Milk Ricotta Cheese (I used homemade ricotta because it's drier!)
8 oz of Mascarpone Cheese
8 oz of Philadelphia Cream Cheese
1 1/2 cups Granulated White Sugar
6 Large Eggs (individually added)
2 Egg Yolks
2 tbsp Fresh Orange & Lemon Zest
1/4 cup of Heavy Cream
2 tsp of Pure Vanilla Extract
1 shot of Limoncello
